This is a perfect almost fudgy chocolate cake that gets glazed with the most luscious chocolate frosting that takes just minutes to make. Chocolate and coca-cola make this cake to die for! It is so easy to make and you will want to keep a pan around all the time! A scoop of ice cream and cherry on top and you will have the best dessert ever!

There is nothing I love more than going out to Cracker Barrel with my family for dinner.  Of course every time before we leave we have to get some of their delicious double fudge coca cola cake.

This cake is so rich and fudgy.  It has an amazing chocolate glaze that sets up perfectly.  This cake is absolutely amazing when topped with a scoop of vanilla ice cream.  No wonder it is a fan favorite!

Coca Cola is what makes this cake unique from all the other chocolate cakes out there.  It helps bump up the chocolate flavor and gives it a lightness but a fudginess at the same time.

Can I freeze this Copycat Cracker Barrel Double Fudge Coca Cola Cake?

Of course!  This cake actually freezes beautifully.  Just wrap it up in plastic wrap and a freezer-safe bag and keep in the freezer for up to 3 months. 

Can I use diet cola?

Unfortunatly no.  This cake tastes and works best with regular cola. 

Can I use different cola flavors?

While it will change the flavor you can definitely use different flavors of cola. Try cherry cola, root beer or Dr. Pepper.

 

Ingredients used

● Flour- I just use regular all-purpose flour for this recipe.
● Sugar-  Granulated sugar is used for this recipe.
● Baking soda-  This helps make the cake light.
● Coca-Cola-  One of the star ingredients. Don’t use diet, just use regular cola. 
● Salted butter-  I like to use salted so I don’t have to add any extra salt to the recipe.
● Baking cocoa-  This is unsweetened baking cocoa. 
● Eggs-  Helps bind everything together.
● Vanilla-  You can use vanilla paste or extract.
● Buttermilk- This helps make the cake fluffy.
● Powdered sugar- For the icing powdered sugar is the best to use. 

How to make this Copycat Cracker Barrel Double Fudge Coca Cola Cake

 

  1. FULL RECIPE BELOW
  2. Preheat oven.
  3. In a large bowl whisk together the sugar, flour, and baking soda.
  4. In a small sauce pan over medium heat bring the 1 cup butter, 6
    tablespoons baking cocoa, and 1 cup Coca-Cola to a boil while whisking.
  5. Once it comes to a bubble remove it from the heat immediately and pour into the flour mix.
  6. Stir to combine.
  7. Next add the vanilla, buttermilk and eggs until well mixed.
  8. Pour into a greased 9×13 cake pan and for 30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Remove from the oven and immediately make the frosting.
  10. In a medium saucepan over medium heat bring the ½ cup butter, 3 tablespoons of baking cocoa, 6 tablespoons of coca-cola and vanilla to a boil.
  11. As soon as it boils remove from heat and whisk in the powdered sugar until it is smooth and well combined.
  12. Immediately pour the frosting over the cake.
  13. Let the frosting set for about 10 minutes and serve!

Notes

● Store leftovers covered for 2 days on the counter or 4 days in the fridge.
● You can add walnuts or pecans to the frosting for a nutty spin on this cake.
● This cake is amazing warm, room temperature or even cold.
● I like to serve it with a scoop of vanilla ice cream and a cherry on top.
● You can use Dr. Pepper or Cherry Coca-cola for this.
● Do not use diet soda in this recipe.
