This Slow Cooker Million Dollar Chicken and Potatoes is my new favorite go to dinner! I love anything in the slow cooker and this dinner is amazing! Tender bites of chicken and potatoes cook up in a rich, creamy sauce before getting topped with buttery crackers, cheese and scallions. The flavor of this dish is so good you will want it every week!

There is nothing I love more an easy dinner that I can just throw in the slow cooker that everyone in my house loves and this million-dollar chicken and potatoes are perfect.

I love that I can just throw everything in the slow cooker and have a delicious, flavorful dinner that everyone really enjoys.  Whenever I find a dinner that everyone in my house eats I get happy!  And for it to be in the slow cooker? That’s a win for this mama. 

This Million Dollar Chicken and Potatoes are such a rich and flavorful dish, hence the name.  This dish starts with diced chicken and baby potatoes that get mixed up in a creamy sauce of cottage cheese, sour cream, cream of chicken soup, seasonings before getting topped with butter cracker crumbs, cheese and scallions.  This dish is always a winner in my house and I know you will love it too!

Even though this is called Million Dollar Chicken it actually is a pretty affordable dish!  Chicken and potatoes get mixed with just a few other ingredients to make this stunning dinner. So this is a fabulous dinner when you are trying to save a few pennies.

Next time you want a family-friendly dinner even the pickiest kids will love throw these ingredients together and let the slow cooker take care of the rest! This is also a great dish for entertaining and can feed quite a few people.

Can I use any chicken?

Yes, you could use chicken tenderloins or boneless thighs, cook time will vary. You could also use cubed pork.

What should I serve this Slow Cooker Million Dollar Chicken and Potatoes with?

While this does have potatoes in it, it is wonderful over mashed potatoes or white rice.  You can also just serve it with a salad or some roasted veggies.

Can I freeze this?

While you can store the leftovers in the fridge for up to 4 days I do not think this would be very good frozen because of the potatoes and the creamy sauce could separate and the topping would be hard to crisp back up. 

 

Ingredients used

● Chicken breast- Cut these into bite-size pieces.
● Baby potatoes- Use whatever color you like.  Baby red, gold or a mix are perfect for this dish. 
● Cottage cheese-  I know cottage cheese can get a bad rep but in this dish it helps make a rich, creamy sauce. 
● Sour cream-  This also lends to the creaminess of this dish. 
● Cream of chicken soup-  This adds flavor and richness to the dish but you can switch it up and use cream of mushroom, cream of celery or cream of onion. 
● Garlic salt- For flavor, you could use fresh or jarred garlic if you prefer. 
● Onion powder-  You could use fresh onion if you like. 
● Sharp cheddar cheese-  This goes in the sauce and mixed in to the cracker topping. 
● Scallions-  These add just a bit of onion flavor but don’t skip out on these!  They make the dish. 
● Ritz crackers-  You want to use Ritz as they are buttery and lend to the richness of this dish.  I used their Garlic Butter flavor and it was amazing!
● Butter-  This is for the topping.

How to make this Million Dollar Chicken and Potatoes

 

  1. FULL RECIPE BELOW
  2. Add your chicken and potatoes to the slow cooker.
  3. In a mixing bowl combine the cottage cheese, sour cream, cream of chicken soup, garlic salt, and onion powder.
  4. Stir the cottage cheese mixture into the slow cooker combining it with the chicken and potatoes.
  5. Cover and cook on low for until the potatoes are fork-tender.
  6. Stir in 1 cup of shredded cheese and half of the chopped scallions.
  7. In a mixing bowl combine the crushed crackers with the melted butter and the remaining shredded cheese and scallions.
  8. Sprinkle the cracker mixture all over the top and place the lid back on for 15-20 minutes until the cheese is melted.
  9. Serve!

Ingredients

  • 1 ½ pounds chicken breast cut into bite size pieces
  • 1 ⅕ pounds baby potatoes
  • 1 cup cottage cheese
  • ½ cup sour cream
  • 1 (10.75 ounce) can of cream of chicken soup
  • ½ teaspoon garlic salt
  • ½ teaspoon onion powder
  • 2 cups sharp cheddar cheese, shredded, divided
  • 6 scallions, chopped, divided
  • 1 sleeve ritz crackers (I used garlic butter flavor), crushed
  • 6 tablespoons butter, melted

Instructions

  1. Add your chicken and potatoes to the slow cooker.
  2. In a mixing bowl combine the cottage cheese, sour cream, cream of chicken soup, garlic salt and onion powder. 
  3. Stir the the cottage cheese mixture into the slow cooker combining with the chicken and potatoes. 
  4. Cover and cook on low for 4-6 hours until the potatoes are fork tender. 
  5. Stir in 1 cup of shredded cheese and half of the chopped scallions.
  6. In a mixing bowl combine the crushed crackers with the melted butter and remaining shredded cheese and scallions. 
  7. Sprinkle the cracker mixture all over the top and place the lid back on for 15-20 minutes until cheese is melted.
  8. Serve!

Notes

  • Store leftovers in an airtight container for up to 3 days. 
  • You can add whatever seasonings you like.
  • You can substitute the cheese for your favorite flavor cheese.
  • This would be great with some chopped, cooked bacon added in.
  • Use your favorite flavor cracker, the garlic butter is our favorite.
  • We like to serve this over rice but it is also fabulous over egg noodles or mashed potatoes.
