This Slow Cooker Copycat Chipotle Barbacoa is a delicious copycat of everyone’s favorite take out burrito place.  Tender, flavorful beef cooks all day in the slow cooker and is perfect for burrito bowls, burritos or tacos.

Who doesn’t love Chipotle?  I think everyone loves going there and their food is delicious.  While we do like going there my family is not a fan of cilantro so it can be difficult to eat there.  So that is why I love re-creating their burrito bowls and burritos at home, plus it saves me a ton of money lo.

I love an easy dinner that I can just throw in the slow cooker and this barbacoa is amazing in the slow cooker!  It comes out perfect every time. My whole family loves this meal.

I love that I can just throw everything in the slow cooker and have a delicious, flavorful dinner that everyone loves.  Whenever I find a dinner that everyone in my house eats I get excited!  And for it to be in the slow cooker? That’s a double score!  They can eat this flavorful beef any way they want, as burritos, burrito bowls, nachos, tacos, quesadillas, anything you like. 

This beef cooks in a flavorful sauce until it is nice and tender.  Then you just shred it up to make anything you want, it is so versatile.

All you need to make this delicious beef, onion, garlic cloves, beef broth, lime juice, ground oregano, cumin, garlic salt, black pepper, cloves, chipotles in adobo, and bay leaves.  I always have these ingredients on hand so that makes it easy to whip this up whenever we have a craving.

I love that you can customize this to your family’s taste, you can add onions and peppers, make it spicy, add shredded cheese, you can totally make these your own.

Yes, while barbacoa is beef you can use these ingredients with boneless chicken thighs or pork loin.

Can I make this spicier?

You can add red pepper flakes or sriracha to give this a kick. 

 

Ingredients used

  • Chuck Roast –  This is the best beef for this recipe.  You could use stew beef but adjust the cook time accordingly.
  • Onion –  A sweet onion is great in this recipe.
  • Garlic Cloves – You can use fresh or jarred.
  • Beef Broth –  Helps make the sauce, just use your favorite.
  • Lime Juice – I like to use fresh but you can use bottled.
  • Ground Oregano – For flavor.
  • Cumin – This is very important to the flavor.
  • Garlic Salt – I like to use Lawry’s.
  • Black Pepper- For flavor.
  • Cloves- I know it sounds a little strange but trust me it gives this beef a great flavor.
  • Chipotles in adobo- This also is a big part of the flavor.
  • Bay Leaves – Make sure to remove these at the end of cooking. 

How to make this Copycat Chipotle Barbacoa Beef

 

  1. FULL RECIPE BELOW
  2. To your slow cooker add the chuck roast.
  3. Add in the slices onions and garlic.
  4. Add the beef broth and lime juice to the slow cooker.
  5. Sprinkle over all the spices and seasonings. 
  6. Pour the chipotle adobo sauce over the roast.
  7. Add the 2 bay leaves.
  8. Cook on low 6-8 hours or high 4-6 hours until the meat is tender and falls apart.
  9. Remove the beef from the slow cooker and shred.
  10. Return the beef to the slow cooker.
  11. Serve this beef on burrito bowls or in a burrito or tacos.

Ingredients

  • 3-4 pound chuck roast
  • 1 small onion, sliced
  • 5 garlic cloves, minced
  • ½ cup beef broth
  • Juice of 2 limes
  • ½ tablespoon ground oregano
  • 2 teaspoons cumin
  • 2 teaspoons garlic salt
  • 1 teaspoon black pepper
  • ½ teaspoon cloves
  • Liquid from 7 ounce can of chipotles in adobo
  • 2 bay leaves

Instructions

  1. To your slow cooker add the chuck roast.
  2. Add in the slices onions and garlic.

Notes

  • If you want this spicier blend up a chipotle pepper or two and add it to the slow cooker.
  • Store leftovers in the fridge for up to 3 days.
  • You can sear the meat before adding to the slow cooker but it is not necessary. 
  • If there is too much juice left at the end of cooking you can pour some off before adding the beef back to the slow cooker.
