Can I use another protein for these hot beef sandwiches?

Yes, you could also use a pork roast, boneless skinless chicken breasts or thighs but cooking times will vary there.

What should I serve these Slow Cooker Cowboy Beef Sandwiches with?

These are delicious piled high on soft buns and served alongside coleslaw, mac and cheese but I love serving them with this Bacon Pimento Cheese Potato Salad.

Can I adjust the heat level?

Of course!  You can add more diced jalapenos, add fresh jalapenos at the end or some sriracha to make it spicier.  If you want to reduce the heat you can omit the jalapenos or substitute green chiles for a milder heat.

 

Ingredients used

  • Chuck Roast –  I like to use a beef chuck roast, it is the best cut of beef for this dish. 
  • BBQ Sauce – Use your favorite brand. 
  • Bacon – You can dice up and cook your own bacon, but feel free to use microwave or precooked as well. 
  • Onion- Sweet onions are perfect for this dish.
  • Worcestershire sauce– Gives a rich, savory flavor to the dish. 
  • Garlic- Fresh or jarred.
  • Brown Sugar – Gives sweetness to this beef. 
  • Diced Jalapenos – These do not make it too hot at all, but you can omit them or use diced green chiles for a milder heat. You can also use bell peppers instead.  I also have made these with pepperoncini peppers and they were fabulous!
  • Colby Jack Cheese – Use your favorite, sharp cheddar, provolone cheese or pepperjack would also be great!
  • Buns – I like to use brioche buns or sub rolls, but these also make great sliders. You can even use hoagie rolls or onion kaiser rolls.  Any crusty rolls will be great!
  • Crispy fried onions – The same kind you put on your green bean casserole :)

How to make these Slow Cooker Cowboy Beef Sandwiches

 

  1. FULL RECIPE BELOW
  2. Into the slow cooker place beef, bbq sauce, half of the cooked bacon, the onion, worcheshire sauce, garlic, brown sugar and half of the jalapenos.
  3. Cook on low for 6-8 hours or high for 4-6 hours until the meat falls apart with a fork.
  4. Shred beef using 2 forks.
  5. Drain most of the liquid from the slow cooker.
  6. Pile the shredded beef mixture on hoagie buns and serve.
  7. Store left overs in an airtight container for up to 3 days.

Ingredients

  • 3 pound chuck roast
  • 2 cups bbq sauce
  • 1 pound bacon, cooked and crumbled
  • Half an onion, sliced
  • 2 tablespoons worcheshire sauce
  • 3 cloves garlic, minced
  • ¼ cup brown sugar
  • 4 ounce can diced jalapenos
  • Sliced colby jack cheese
  • Buns
  • Crispy fried onions

Instructions

  1. Into the slow cooker add your beef, bbq sauce, half of the cooked bacon, the onion, worcheshire sauce, garlic, brown sugar and half of the jalapenos.
  2. Cook on low for 6-8 hours or high for 4-6 hours until the meat fall apart with a fork.

  5. Assemble your sandwiches.

Notes

● You can store the leftover beef in the fridge for up to 3 days.

● The jalapenos that are slow cooked realy do not add that much heat so if you are sensitive to heat you can leave out the ones for topping.
● You can use your favorite bbq sauce and switch up the flavor of cheese.
