These Slow Cooker Cowboy Beef Sandwiches are going to be your new favorite dinner! Tender beef cooks all day in a sauce of bbq sauce, onion, jalapenos, bacon, brown sugar, garlic and worcheshire sauce. We pile this on buns with melty cheese, more jalapenos and bacon and top it off with crispy onions!

There is nothing I love more an easy dinner that I can just throw in the slow cooker that everyone will love and these Cowboy Beef Sandwiches fit the bill.

I love that I can just throw everything in the slow cooker and have a delicious, flavorful dinner that everyone really enjoys especially in the summer when it is too hot to turn the oven on.  Whenever I find a dinner that everyone in my house eats I get excited!  And for it to be in the slow cooker? That’s a double win!

This beef just falls apart and is so tender and flavorful.  It cooks all day in a sauce of , I could not believe it! This cooks up in a flavorful sauce of bbq sauce, onion, jalapenos, bacon, brown sugar, garlic and worcheshire sauce. Pile this on soft brioche buns or sub buns with melty cheese, more jalapenos, bacon and top it off with crispy onions!

My favorite part is that you can customize this to your family’s taste, make it spicier, cheesier, add your favorite seasonings, you can totally make this recipe your own.

This also makes enough for a crowd or for dinner with some amazing leftovers for the next day.

We love this on soft buns but it is also so delicious on top of rice, baked potatoes, mashed potatoes or even mac and cheese.

Next time you want a family-friendly dinner even the pickiest kids will love throw these ingredients together and let the slow cooker take care of the rest!

Your whole family will love these Slow Cooker Cowboy Beef Sandwiches, I promise.

This will be your new favorite recipe because

  • Easy and fast.
  • Family friendly.
  • Full of flavor.
  • A set it and forget it meal.
  • Perfect for weeknights.
  • Great for entertaining.

My favorite slow cooker for this recipe is this Hamilton Beach one.

Can I use another protein?

Yes, you could also use a pork roast, boneless skinless chicken breasts or thighs but cooking times will vary there.

What should I serve these Slow Cooker Cowboy Beef Sandwiches with?

These are delicious piled high on soft buns and served alongside coleslaw, mac and cheese but I love serving them with this Bacon Pimento Cheese Potato Salad.

Can I adjust the heat level?

Of course!  You can add more diced jalapenos, add fresh jalapenos at the end or some sriracha to make it spicier.  If you want to reduce the heat you can omit the jalapenos or substitute green chiles for a milder heat.

Ingredients used

  • Chuck Roast –  I like to use a beef chuck roast, it is the best cut for this dish.
  • BBQ Sauce – Use your favorite brand.
  • Bacon – You can dice up and cook your own bacon, but feel free to use microwave or precooked as well.
  • Onion- Sweet onions are perfect for this dish.
  • Worcheshire sauce – Gives a rich, savory flavor to the dish.
  • Garlic- Fresh or jarred.
  • Brown Sugar – Gives sweetness to this beef.
  • Diced Jalapenos – These do not make it too hot at all, but you can omit them or use diced green chiles for a milder heat.
  • Colby Jack Cheese – Use your favorite, sharp cheddar or pepperjack would also be great!
  • Buns – I like to use brioche buns or sub rolls, but these also make great sliders.
  • Crispy fried onions – The same kind you put on your green bean casserole :)
