The weather is warming up and that means the grills are going to start coming out and soon the neighborhood will be filled with the smell of grilled burgers and hot dogs. We are planning a big Memorial Day cookout at my grandparents house and everyone has to bring a side. With two little ones it can be a little hard to find that perfect grilling side dish that even my kids will eat but I finally have it!! Bacon Pimento Cheese Potato Salad!!
Also with 2 little ones, grocery shopping can be a little crazy – that is why I get all the things to make this potato salad and all my other Memorial Day needs at Walmart with their awesome grocery pick up. I love that thing I swear!! You just get the app, add your groceries from the comfort of your sofa and pajamas -, then you just pick the up at the store, you don’t even have to get out of the car!!! Lifesaver!
This potato salad comes together in no time and doesn’t have a ton of ingredients and I can whip it up easy the day before Memorial Day and it will be ready to go to the cookout!
My kids love this potato salad but what’s not to like about potatoes, cheese and bacon lol!
All I needed for this recipe was some peeled, chopped, boiled potatoes and a traditional pimento cheese recipe.
I added a little more mayo than I would in regular pimento cheese and added a scant amount of onion because every potato salad needs a little onion.
Then of course I added bacon!!! Everything is better with bacon, especially potato salad!
I have made a million recipes to take to my family cookouts and they are all devoured and raved about but I have never received so many compliments on a dish before as I did with this Bacon Pimento Cheese Potato Salad. Every person loved it and begged for the recipe and so I am sharing it today!
There are a few secrets to getting this Bacon Pimento Cheese Potato Salad perfect and that is the mayo, bacon and cheese.
I love using Heinz Mayo made with Cage Free Eggs. I keep it in stock in my fridge all summer for all those sandwiches, hot dogs and hamburgers. I love the squeeze bottle design, makes everything so much easier!!
Also you have to use a good bacon for the potato salad and what is better than Oscar Mayer Bacon?? It is our favorite! I crumble it up for salads and potato toppings, fry up slices for bacon cheeseburgers and of course there is nothing like a good BLT on a hot summer night!
Finally the most important part of this Bacon Pimento Cheese Potato Salad is the cheese! I prefer to use Kraft Cheddar in my pimento cheese, it has a great rich flavor that we love. You can get a block and shred it yourself or buy the pre-shredded if you need to save a little time.
I promise you will be the hit of the BBQ with this recipe, and you better get used to making it because you will be asked to make it A LOT (trust me I know lol).

What potatoes are best to use?
I prefer to use yellow potatoes for my potato salad but any kind is fine, Russets work wonderfully and so do red skinned!
Can this be made in advance?
Yes! It is actually better made the night before. I wouldn’t make too much more in advance than just the day before.

- 3 pounds potatoes peeled washed, diced
- 8 slices Oscar Mayer Bacon 16 oz. Package, cooked and crumbled
- 2 cups shredded Kraft sharp cheddar cheese
- 3/4 cup Heinz Mayo Cage Free Eggs
- 2 Tablespoons diced pimento peppers
- 1 teaspoon minced onion
- 1 tablespoon Lea & Perrins Worcestershire Sauce
- dash of hot sauce
- salt and pepper to taste
- Peel, wash and dice the potatoes.
- Boil in salted water until just fork tender. (you don't want them so tender they fall apart)
- Mix the remaining ingredients together.
- Mix the cheese mixture and cooled potatoes together using a fork to help squish the mixture together.
- Chill and serve.
