My favorite part is that it is no bake and when the weather outside is hot I do not want to turn on the oven.  No bake desserts are my favorite all year round but especially in the warmer months.  The perfect cool treat for hot summer days.

Can I use any cookies?

Yes! This would be delicious with graham crackers, shortbread cookies, or vanilla wafers.  You can use vanilla sandwich cookies as well. 

Does this have to freeze for 8 hours?

I know 8 hours sounds like to forever to wait for this delicious dessert but it will be worth it!! The cake does need this time in the freezer for the cookie layers to get soft and achieve that cake-like texture.

Ingredients used in this easy lemon icebox cake

  • Lemon sandwich cookies-  Oreo usually has their lemon cookies out but there are other brands that make lemon sandwich cookies as well.
  • Instant lemon pudding mix-  This is where the lemon flavor comes from.  This pudding mix helps you get this dessert done fast to create the creamy lemon filling.
  • Milk-  You need milk to make the instant pudding so use your favorite.
  • Cream cheese- This helps create a rich, creamy texture and also helps the filling set up.
  • Whipped topping-  Such as cool whip. This tops off this gorgeous no bake lemon dessert.
  • Lemon slices and mint- For garnish

How to make this no bake lemon icebox cake

 

  1. FULL RECIPE BELOW
  2. In the bottom of a 9×13 lay out half of the cookies in a layer. 
  3. In a large bowl whip your softened cream cheese until light and fluffy.
  4. In a separate bowl whisk your pudding and milk together until combined.
  5. Using an electric mixer combine the pudding and cream cheese.
  6. Spoon half of the lemon mixture over the cookie layer.
  7. Use the remaining cookies to make a layer ontop of the lemon layer.
  8. Spread over the rest of the lemon mixture.
  9. Top with the whipped cream.
  10. Cover and place into the refrigerator 8 hours or overnight so the cookies can soften.
  11. Garnish with lemon slices and mint before serving!
  12. Store leftovers in an airtight container in the refrigerator for up to 4 days.

  • 2 (3.4 ounce) boxes instant lemon pudding mix
  • 3 cups milk
  • 8 ounces cream cheese, softened
  • 8 ounce whipped topping, thawed
  • Lemon slices and mint for garnish

Instructions

  1. In the bottom of a 9x13 lay out half of the cookies in a layer.

Notes

●This definitely needs to sit at least 8 hours for the cookies to soften. 

  • You can also garnish with lemon zest.
  • You can use vanilla cream cookies too if you like. 
  • Store leftovers in the refrigerator for up to 4 days.
  • This freezes beautifully covered for up to 3 months.
