This Caramel Apple Icebox Cake is my favorite no bake dessert!

This No Bake Caramel Apple Icebox Cake is the perfect fall dessert!  Layers of cinnamon graham crackers, butterscotch pudding mixed with apple pie filling sit overnight to become one luscious no bake cake full of caramel apple flavor!

There is nothing I love more an easy dessert that I can just whip together and that everyone will love and this icebox cake is just that.

My favorite part is that it is no bake.  Here in Virginia sometimes the Fall can be warm some days but you still want a Fall dessert, so I love that this icebox cake is cool, no bake but full of Fall flavor.  No bake desserts are my favorite all year round, they are so delicious!  

Icebox cakes are a little vintage and always a classic.  Creamy custard gets layered with graham crackers and voila you have an icebox and they can be made in so many different flavors.

This version is perfect for Fall.  Butterscotch pudding and apple pie filling make a luscious creamy custard that goes perfectly with the cinnamon graham crackers.  The whole thing freezes overnight so the graham crackers get nice and soft like little layers of cake.  Then you thaw the cake a little, slice it and serve!! 

Of course because of the freeze time this cake is a perfect make-ahead dessert.  So not only is this cake easy and no-bake but it also can be made ahead, what more could you ask for?!

This caramel apple cake is also perfect for get-togethers.  Everyone will be impressed and you get in and out of the kitchen in no time!

Can I use homemade whipped cream?

Yes! Feel free to use your own whipped cream as long as you use the same amount. 

Can I use my own apple pie filling?

Sure!! Just make the pieces are chopped small.  You can also just chop up a few apples and saute them with butter, cinnamon and brown sugar to create a quick filling. 

Does this have to freeze for 8 hours?

I know 8 hours sounds like forever to wait for this delicious dessert but it will be worth it!! The cake does need this time in the freezer for the graham cracker layers to get soft.  It is what gives it the cake like texture.

Ingredients used

  • Butterscotch Pudding – Make sure you are using instant pudding.
  • Milk –  Use your preferred milk for making pudding. 
  • Whipped Topping – Cool whip is what you need to make this recipe. 
  • Apple Pie Filling – Make sure to cut these up into little pieces. 
  • Cinnamon Graham Crackers – You can use regular graham crackers but the cinnamon ones add such a nice cozy flavor. 
  • Caramel Sauce – I like to use a thick caramel sauce for topping.

How to make Caramel Apple Icebox Cake

 

  1. FULL RECIPE BELOW
  2. Line a 9×13 baking dish with plastic wrap with plenty of overhang.
  3. In a large mixing bowl combine the instant pudding with the cold milk.
  4. Whisk until combined.
  5. Chop up the apple pie filling into smaller pieces.
  6. Mix the apple pie filling into the pudding mix.
  7. Fold one container of whipped topping into the pudding mix. 
  8. Spoon a little of the filling into the bottom of the pan and spread out. 
  9. Place down a layer of graham crackers in the pan, you may need to break a few to cover the bottom. 
  10. Spoon a third of the pudding mixture on the layer of graham crackers and spread out.
  11. Repeat with a layer of graham crackers, another third of the filling, another layer of graham crackers and the remaining filling. 
  12. Then top with whipped topping. 
  13. Cover and freeze or refrigerate overnight. 
  14. If you choose to freeze it, let it thaw 1 hour before serving. 
  15. Before serving drizzle with caramel.
  16. Serve!

  • 3 cups cold milk
  • 2 (8 ounce) containers whipped topping
  • 1 ½ cups apple pie filling
  • (14.4 ounce) box cinnamon graham crackers
  • 1 cup caramel sauce

Instructions

  1. Line a 9x13 baking dish with plastic wrap with plenty of overhang.

Notes

  • Store leftovers in an airtight container for up to 4 days. 
  • This freezes beautifully for up to 3 months.
  • Sprinkle a little cinnamon on top for garnish if you like. 
  • You can use honey graham crackers if you like.
