I always love finding easy but comforting dinners that the whole family will love and that is why I love these Slow Cooker Marry Me Pork Chops.  This is such an easy weeknight dinner that is always a family favorite. It is also impressive enough to serve to guests.

Pork chops cook up nice and tender in the slow cooker smothered in a creamy, garlicky sauce studded with sun dried tomatoes before being served over creamy mashed potatoes.  This is one luscious dish.

This dish is fabulous as is but you can add some spinach, onion or mushrooms to it if you like.

Ingredients you need

  • Boneless Pork Chops –  I like to use thick pork chops for this recipe, they come out perfectly tender. 
  • Chicken stock- I like to use low sodium but you can use whichever you like.
  • Cornstarch- This helps thicken the dish.
  • Heavy cream- Gives the dish it’s rich creaminess.
  • Garlic- Use as much as your heart desires
  • Italian seasoning- Gives this dish a pop of flavor
  • Onion powder- Helps flavor this dish
  • Paprika- Gives a little color and a little flavor
  • Sundried tomatoes- You can use dry or wet packed.
  • Butter- Gives this dish a richness
  • Basil for garnish- Optional but provides a pop of color and flavor.

How to make this Slow Cooker Marry Me Pork Chops

  • Full recipe below
  • Place the pork chops in the slow cooker.
  • In a mixing bowl combine the chicken stock, cornstarch, cream, garlic, italian seasoning, onion powder and paprika.
  • Pour the sauce mix all over the pork chops.
  • Top with the sundried tomatoes and butter.
  • Cover and cook on low for 6 hours or high for 4 hours.
  • Garnish with basil.
  • Serve over mashed potatoes!

Can I use any other protein?

Yes! You could use boneless skinless chicken thighs which will be very tender and moist.  You can use a pork tenderloin or you can use chicken breasts like in this Slow Cooker Marry Me Chicken.

What should I serve this over?

This is great over mashed potatoes but it is also fabulous over pasta like fettucini, linguini, spaghetti, or even rice. 

What can I add to this?

You can add sliced onions to the slow cooker or fresh mushrooms or spinach. 

How to store the leftovers?

Just store this in an airtight container in the fridge for up to 3 days.

You can serve a pork chop on top of a pile of mashed potatoes or shred the pork and add it back to the sauce before serving.

Ingredients

  • 8 boneless pork chops
  • 1 ½ cups chicken stock
  • 3 tablespoons cornstarch
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 teaspoon italian seasoning
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • ½ cup sundried tomatoes
  • 4 tablespoons butter
  • Basil for garnish

Instructions

  1. Place the pork chops in the slow cooker.
  2. In a mixing bowl combine the chicken stock, cornstarch, cream, garlic, italian seasoning, onion powder and paprika.
  3. Pour the sauce mix all over the pork chops.
  4. Top with the sundried tomatoes and butter.
  5. Cover and cook on low for 6 hours or high for 4 hours.

Notes

  • You can use thick or thin pork chops or even bone in, just adjust your cooking time to account for the thickness of the chops.
  • You can add spinach or mushrooms to the slow cooker too. 
  • Parmesan cheese would be great on top of this.
  • This is also delicious over rice or pasta.
