Hey guys!!! It is that time of year again!! Back to school time!! I love it so much!! Mostly because it means fall is right around the corner (my favorite season!) lol.  I also just love everything back to school brings.  The new clothes, new school shoes, fresh new back packs, crisp folders and brand spanking new crayons.

One thing I think a lot of struggle with is juggling that new schedule, that new routine.  It takes us all a little while to get back into the groove.  Even if we do get back into the groove there are days that are filled with after school activities, homework, bath time, laundry (oh the never ending school laundry!) So I am going to share with you one of my favorite family friendly dinners that is ready and waiting for you when you finally get home!

This recipe is perfect for those busy days when you know by the time you get home the last thing you want to do is cook dinner, this Slow Cooker Green Chile Pork has your back!!

In the morning when you are packing those lunches and getting the kids out the door, just take 5 minutes to throw everything in the slow cooker and dinner is done!

It is packed full of flavor like green chiles, salsa verde, garlic and cumin, yum!! It cooks all day until it is fall apart tender.  Even the leftovers are amazing (if there is any left!!)

Is this spicy?

Not at all!! The green chiles and salsa verde are very mild and just add flavor not heat!

Can I make it spicy?

Of course!!! Get a spicy or hot level salsa verde or add in some canned jalapeños!  You can also add your favorite hot sauce!

We like having this pork as tacos and just piling it in warm tortillas with a little squirt of lime but it is so versatile!  We just had it last night alongside some cheesy rice and beans, simple, quick and delicious!

Slow Cooker Green Chile Pork

Ingredients

  • 2 pound Smithfield All Natural Boneless Loin Filet
  • 2-3 cloves garlic minced
  • 1 4 oz jar diced green chiles
  • 1 cup salsa verde
  • 2 teaspoons cumin
  • 1 1/2 teaspoons salt
  • 1 teaspoon pepper

Instructions

  1. Place everything in the slow cooker and add just enough water to almost cover pork
  2. Cook on low 6 hours
  3. Remove some of the juice from slow cooker
  4. Shred pork and leave in remaining juice in crockpot on warm
  5. Serve in tortillas or anyway you like!
