This Cube Steak Chili is a hearty slow cooker favorite that everyone loves.

This Slow Cooker Cube Steak Chili is the perfect delicious weeknight dinner that is budget friendly and perfect for the Fall!  A perfect chili base full of beans cooks up with cube steak which takes it above and beyond your normal chili.  The cube steak cooks up nice and tender and gives you nice chunks of beef in the chili.  This is my new favorite way to make chili.

 

I love delicious and cozy dinners that I can just throw in the slow cooker and I know that everyone will love and this Cube Steak Chili is one of our favorites.

 

I love that I can just throw everything in the slow cooker and have a delicious, flavorful dinner that everyone really enjoys.  Whenever I find a dinner that everyone in my house eats that is amazing because I have some picky eaters!  And for it to be in the slow cooker? That’s a double win!  

 

This is also always a hit at get-togethers because who doesn’t love a chili bar?  Serve this alongside some tortilla chips and baked potatoes and let everyone customize their own bowl.

 

This starts with my easy flavorful chili that slow cooks all day, but the twist is the cube steak!! 

 

You slice up the cube steak and add that instead of the more traditional ground beef and it comes out in tender chunks of beef that hold their shape in the chili but melt in your mouth.  It is my new favorite protein for chili!

 

I love that you can customize this to your family’s taste, make it spicier, switch up the beans, add your favorite seasonings, add corn, you can totally make this recipe your own.  You can also top this with anything you like. I like to just add scallions but you can top it with black olives, jalapenos, cilantro, sour cream or avocado. 

 

Can we also take a minute to talk about how affordable this dinner is?  Everyone is feeling the pinch at the grocery store right now and you can’t get much cheaper than cube steak and beans.  So this is a fabulous dinner when you are trying to save a few pennies and it makes a ton!  The leftovers are also amazing and can be used to make nachos or goulash.

Can I freeze this?

You can freeze this after cooking.  Just pop it in a freezer-safe bag and freeze for up to 3 months. 

Can I use any protein?

Yes, you can use any meat you like and it will work with this chili, I do like to use the cube steak because it is affordable and tender.  But you can use ground beef, chicken, turkey, pork, stew beef.  You could even use diced up chicken tenderloins. 

What should I serve this with?

This is a great dish on it’s own but it is really good with a salad or some cornbread on the side.  I actually like to serve it with this Classic Corn Casserole.

Can I make this spicier?

You can add red pepper flakes or sriracha, add fresh or canned jalapenos to the chili while cooking or top with jalapeno slices before serving to give this a kick.

INGREDIENTS USED

  • Cube steak –  This is the star of this recipe, it cooks up tender and makes this chili hearty!
  • Tomatoes with green chiles –  Also known as Rotel, this adds so much flavor.
  • Tomato sauce – Any brand tomato sauce will work.
  • Dark red kidney beans –  You can use dark or light kidney beans, whichever you prefer. 
  • Chili beans – These are chili beans that come in a sauce, do not drain these.
  • Mixed beans in chili sauce –  Like above these come in a sauce and you do not want to drain that off. 
  • Mixed peppers and onions –  I save time and just use frozen but fresh works great too.
  • Chili seasoning –  Any brand you like will work. 
  • Chili powder –  This adds flavor but not heat so do not worry. 
  • Paprika –  This adds a smokiness and great color to the chili. 
  • Sugar –  I know it sounds weird but the sugar helps cut the acidity in all that tomato sauce.
  • Toppings – I like to top mine with sour cream, scallions, crackers or fritos but you can top it with anything you like.

  • 1 (15 ounce) can chili beans in sauce not drained
  • 1 (15 ounce) can mixed beans in chili sauce, not drained
  • 1 1/2 cups frozen mixed peppers and onions
  • 1 (1 ounce) envelope chili seasoning
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 tablespoon sugar
  • Toppings like cheese, scallions, sour cream

Instructions

  1. To your slow cooker add all your ingredients except for the toppings.
  2. Stir and cover.
