Can I use any chicken?

Yes, you could use chicken tenderloins or boneless thighs, cook time will vary. You could also use turkey.

Can you use something besides Bisquick?

While you do need to use some sort of biscuit mix I have seen people using the Red Lobster Cheddar Bay Biscuit mix and it works perfectly.

Can I change the vegetables?

You can use whatever vegetables your family likes.  Just make sure they are all similar in size so everything cooks evenly.
