This fabulous cake starts with a simple cinnamon graham cracker crust, a creamy cheesecake layer, and a luscious pumpkin pie layer before getting topped with whipped cream.

This is a great dessert in the Fall because it is cool, creamy and rich. I like that I can make it the night before and have a festive dessert for any holiday get-together.

Can I freeze this No Bake Pumpkin Lush?

Lush cakes freeze beautifully. Just wrap them in plastic wrap and freeze for up to 3 months.  Let them thaw an hour before serving. 

Can I use other cookies for the crust?

Yes!  You can use crushed-up vanilla wafers or even vanilla oreos, just keep the same amount. Sometimes you can even find Pumpkin Spice Oreos and those would be perfect.

Ingredients used

  • Cinnamon Graham crackers –  You can use honey one too but the cinnamon ones just add an extra bit of flavor.
  • Butter – You need this help keep the crust together.
  • Cream Cheese – This is the base of the cream cheese layer.
  • Powdered Sugar – This sweetens the cream cheese layer.  It is important to use powdered sugar and not granulated sugar.
  • Whipped Topping – This mixes into the cheesecake layer and also for the top.
  • Evaporated Milk –  This is for the pumpkin layer.
  • Pumpkin Puree –  Make sure you get pumpkin puree and not pumpkin pie mix, it will not work as well.
  • Vanilla Pudding – You need to get the instant kind for this recipe.  You can also use cheesecake pudding or butterscotch. 
  • Pumpkin Pie Spice – To give it all that pumpkin pie flavor.

How to make this Pumpkin Lush

  1. FULL RECIPE BELOW
  2. In a bowl combine the crushed graham crackers and melted butter.
  3. Press the graham crackers into the bottom of a 9×9 pan.
  4. In a medium mixing bowl combine the softened cream cheese and powdered sugar with an electric mixer.
  5. Fold in one container of whipped topping.
  6. Spread the cream cheese mixture onto the crust carefully.
  7. Next in a medium mixing bowl using an electric mixer combine the evaporated milk, pumpkin puree, instant pudding and pumpkin pie spice. 
  8. Spread the pumpkin mixture over the cream cheese mixture. 
  9. Top with the remaining whipped topping. 
  10. Refrigerate for 4 hours before serving.  You can also freeze this, just let it thaw for 30 minutes before serving. 
  11. Garnish with some crushed graham crackers and cinnamon.
  12. Slice and serve!

  • 6 tablespoons butter, melted
  • 1 (8 ounce) block cream cheese, softened
  • 1 cup powdered sugar
  • 1 (8 ounce) containers whipped topping
  • 12 ounces evaporated milk
  • 15 ounce pumpkin puree
  • 1 (5.1 ounce) instant vanilla pudding
  • 1 teaspoon pumpkin pie spice

Instructions

  1. In a bowl combine the crushed graham crackers and melted butter.
