These Copycat Starbucks Pumpkin Cream Cheese Muffins are so delicious and full of flavor.  They taste just like Fall and are perfect alongside a cup of coffee on those chilly mornings. Perfectly spiced pumpkin muffins with a luscious cream cheese center and toasty pumpkins on top.

I love Fall, I get so excited every year for the leaves to start to fall and the air to get that crisp chill to it.  Of course everyone loves the seasonal offerings at Starbucks when Fall rolls around.

They are famous for the Pumpkin Spice Latte but I go there for their Pumpkin Cream Cheese Muffins.

Moist muffins full of pumpkin flavor and warm spices get topped with crunchy pumpkin seeds and filled with a luscious cream cheese filling.  They are divine!

Lets be honest Starbucks isn’t the most budget friendly place and I wanted a ton of these muffins lol.  

So I figured out how to make them at home and I am so glad, they are delicious and perfect with a cup of coffee on a chilly morning. 

These make a perfect make ahead breakfast for the week but I also love to just keep them around as a snack or even a dessert.  

So fill your house with rich smells of Fall and bake up a batch of these Copycat Starbucks Pumpkin Muffins.

Ingredients used

  • Flour- Just regular flour is all you need to make these delicious muffins.
  • Sugar- White granulated sugar is all you need to make these muffins sweet.
  • Baking Powder- Helps these muffins rise.
  • Baking Soda- Also helps with the rise of these muffins.
  • Pumpkin Pie Spice- You can buy this premixed at the store or you can mix your own.  You can also just use cinnamon if that is all you have on hand.
  • Canned Pumpkin-  Make sure you get pure canned pumpkin and not pumpkin pie mix.
  • Egg- Helps the muffin mix bind together.
  • Butter- Gives a richness to these muffins.
  • Vanilla- For flavor.  You can use vanilla extract or vanilla bean paste.
  • Roasted pumpkin seeds (pepitas)-  You can usually find these in the produce section of the store.  They are roasted, shelled pumpkin seeds.
  • Cream cheese- Make sure you soften this to make it easier to mix
  • Milk-  You don’t need much just a splash of whatever milk your family drinks.

How To make these Copycat Starbucks Pumpkin Muffins

  1. In a mixing bowl whisk together the flour, sugar, baking soda, baking powder, pumpkin pie spice and salt.  
  2. In another bowl combine the canned pumpkin, egg, butter and vanilla.
  3. Combine the wet ingredients into the dry ingredients and gently stir to combine. 
  4. Fill your lined muffin tin with the batter. 
  5. Combine the filling ingredients with a whisk. 
  6. Place the filling ingredients in a small ziploc bag and snip the end off.
  7. Pipe the filling into the center of each muffin batter.
  8. Roughly chop the pumpkin seeds.
  9. Sprinkle the seeds around the edge of the muffins.
  10. Bake in a 350 degree preheated oven for 15 minutes or until baked through. 
  11.  Cool slightly and serve!

Can I use any canned pumpkin?

No, you have to be sure you are using canned pumpkin puree and not pumpkin pie mix.  It is easy to mix up the two but this recipes needs pure pumpkin puree and not the mix.

Can I just swirl in the cream cheese?

Of course, you can easily make these pumpkin cream cheese swirl muffins if you like.  Just use a knife or toothpick to swirl the cream cheese into the pumpkin batter. 

Can I double this recipe?

This is the best recipe to double to triple!

Where can I find the pumpkin seeds?

I always find them in the produce section of my grocery store.  They come roasted and salted or unsalted and either of those will work fine!

Ingredients

  • 1 ½ cups flour
  • ¾ cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • ¼ teaspoon salt
  • 1 ½ cup pure canned pumpkin
  • 1 egg
  • ¼ melted butter
  • 1 teaspoon vanilla
  • Roasted pumpkin seeds (pepitas)
  • Filling
  • 4 ounces cream cheese, softened
  • 2 tablespoons sugar
  • 1 teaspoon flour
  • 1 teaspoon milk
  • ½ teaspoon vanilla extract

  •  Store leftovers for up to 4 days in the refrigerator. 
  • You can skip the pumpkin seeds if you prefer.
