Lemon Brownies are going to blow your mind, they are one of my all-time favorite desserts!

Today I am going to tell you how to make these little squares of lemony heaven!

I love lemon desserts, given the choice, I will always choose lemon.  If there is a lemon dessert on the menu you can bet I’m choosing that over any chocolaty dessert they have to offer.

I think my love of lemon comes from my grandma, we share a fondness for lemon filled doughnuts and lemon sherbet.

Anytime I make a lemon dessert I instantly remember being a little girl in a red bathing suit with a dripping wet ponytail from swimming in my grandparent’s pool all day, I’m standing in the street on the 4th of July watching fireworks the men were setting off and my grandma comes out with a tray of her lemon bars and they are amazing.

I just stand there enjoying the lemony bars while fireworks and lightning bugs light up the summer sky, every year the same and every year just as magical.

Now on to a little secret, yes I am food blogger, yes I wrote a cookbook, and yes my grandma has taught me many of her recipes, but no I cannot make a decent lemon bar to save my life!!  I can make lemon curd, lemon cheesecake, but lemon bars fail every time.

So I gave up, I mean my grandma makes them all the time in the summer so I would just wait till then.

Then I stumbled upon these Lemon Brownies and they are amazing!  So easy to make, just mix them up, pop them in the pan and bake!  They are not cakey at all, they have a fudgy texture.

You top these Lemon Brownies with a simple lemon glaze that gets all crackly and makes these utterly addicting.

I try not to make these too often because I will end up eating the whole pan, they are that irresistible!!

I swear these are my new favorite dessert and since you can pretty much make them with your eyes closed they are dangerous!!

Can I double the recipe?

Yes!  Just use a 9×13 pan instead.  It probably is a good idea to double the recipe because you are going to want seconds!

Do I have to use fresh lemon?

I am all for shortcuts in the kitchen but please step away from the yellow squeezy bottle of lemon juice and buy some real lemons, they make all the difference!

>Lemon Brownies

  1. In the bowl of an electric mixer, beat the flour, sugar, salt, and softened butter until combined.
  2. In a separate bowl, whisk together the eggs, lemon zest, and lemon juice until combined. Pour into the flour mixture and beat at medium speed until smooth and combined.
  3. Pour into baking dish and bake for 25 minutes.
  4. Allow to cool completely before glazing.
  5. When brownies are cooled completely, make the glaze by whisking together all three ingredients.
  6. Spread over the brownies cut into bars.

Ingredients

Brownies

  • 3/4 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup 1 stick butter softened
  • 2 large eggs
  • 2 1/2 teaspoons lemon zest
  • 2 tablespoons lemon juice

Lemon Glaze

  • 1/2 cup powdered sugar
  • 1 tablespoon lemon juice
  • 2 teaspoons lemon zest

Instructions

  1. Preheat oven to 350°F. Spray an 8-by-8-inch baking dish with cooking spray.
  2. Zest and juice two small lemons.
  3. In the bowl of an electric mixer, beat the flour, sugar, salt, and softened butter until combined.
  4. In a separate bowl, whisk together the eggs, lemon zest, and lemon juice until combined. Pour into the flour mixture and beat at medium speed until smooth and combined.
  5. Pour into baking dish and bake for 25 minutes, or until just starting to turn golden around the edges and a toothpick inserted into the center of the brownies comes out clean. Allow to cool completely before glazing.
  6. When brownies are cooled completely, make the glaze by whisking together all three ingredients. Spread over the brownies cut into bars, and try not to eat the whole thing! (I wont tell if you do ;)

    i love lemons and lemon flavoured anything (basically), well… maybe not bugs and weird things, but things that most people would thing are edible and delicious and i love brownies. so this combination seems perfect and fitting for me. Thanks for sharing. Also… I hope this doesn’t come out in all caps lock as it is showing that way for me, and I am not shouting this post comment, but for some reason I can’t seem to get it to turn off.
