This festive cookie cake is the perfect sweet treat for Easter, adorable and delicious!

I love this Easter Cookie Cake.  It is soft, chewy and thick, studded with chocolate chips and chocolate eggs.  A thick buttercream rings the edges with more chocolate eggs.  It is delicious and perfect for Easter!  So springy!

There is nothing I love more during the holidays than a cute dessert treat.  This cookie cake is the perfect dessert or for your Easter table.  A perfectly baked cookie cake studded with chocolate chips and mini cadbury eggs this cake is as delicious as it is adorable.  

This will be a hit with kids and adults and it is super impressive but actually easy to make.  

I love making the pastel icing I piped on the edges, it really takes this cookie cake to a new level and make it even cuter!

While I do love making this in the round spring form pan you can double the recipe and make it in a 9×13 if you need to feed a larger crowd.  

I just love this springy cookie cake, the sweet icing and perfect chocolate chip cookie cake are just a spectacular flavor combo that will have everyone coming back for more and the mini cadbury eggs are fabulous in this cake.

Can I use other chocolate chips?

Of course!! Any flavor of chocolate chips will work great, milk, semi-sweet, caramel, or peanut butter. 

Can I substitute the mini eggs if I don’t like them?

Sure you can!  You would want to substitute with a similar colored candy to get that pastel Easter look.  You can use Easter M&Ms if you like :) 

What should I serve this with?

This is good as is but would be great with a scoop of vanilla ice cream and drizzle of hot chocolate.

Can I make this ahead of time?

You can make this ahead of time.  This will be good to make the day before and it will stay perfect in the refrigerator or tightly covered on the counter until ready to serve.

Ingredients used

  • Butter- butter makes everything better! I like to use salted that way I don’t have to add any salt to the recipe.
  • Brown sugar- keeps the cookie nice and chewy
  • Sugar- for sweetness of course
  • Eggs- for richness
  • Vanilla- you can use vanilla extract or paste
  • Flour- just plain old all-purpose flour
  • Cornstarch- helps make the cookie cake tender
  • Baking soda- for rising purposes
  • Chocolate chips- use whatever kind you like, I prefer semi-sweet
  • Mini cadbury chocolate eggs- the star of the show!
  • More butter for the frosting
  • Powdered sugar- for the frosting, do not substitute granulated.
  • Pastel food coloring- to give the frosting it’s pretty colors.

How to make this Easter Cookie Cake

 

  1. FULL RECIPE BELOW
  2. Preheat oven to 350 degrees. 
  3. Spray an 8-inch springform pan with nonstick spray.
  4. In a large mixing bowl, beat the butter, brown sugar, and sugar until light and creamy.
  5. Add the egg, egg yolk, and vanilla mix for 1 minute.
  6. Stir in the flour, cornstarch,and baking soda until combined. 
  7. Stir in the chocolate chips and cadbury eggs.
  8. Spread cookie dough into cake pan.
  9. Bake for 20-25 minutes until golden brown. 
  10. Run a knife around the edge and release the springform pan. 
  11. Prepare the icing. 
  12. In a bowl combine the butter, vanilla and powdered sugar until light and fluffy.
  13. Separate the frosting into 4 bowls and dye one pink, one blue and one yellow.
  14. Pipe the frosting in alternating colors and top each frosting dollop with the corresponding cadbury egg color. 
  15. Slice into wedges and serve!

  • 12 tablespoons butter, softened
  • 1 cup brown sugar
  • ¼ cup sugar
  • 1 egg
  • 1 egg yolk
  • 2 teaspoons vanilla
  • 1 ¾ cup flour
  • 1 teaspoon cornstarch
  • 1 teaspoon baking soda
  • 3/4 cups chocolate chips
  • ¾ cups mini cadbury chocolate eggs, more for topping
  • Icing
  • 2 sticks butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Pastel food coloring

Notes

● You can add white chocolate chips if you like.
● You can skip the icing or buy storebought.

● You can also pipe the frosting over the whole top if you like.
