This Slow Cooker Taco Meatloaf is the perfect weeknight meal, just set it and forget it! This meatloaf is seasoned with taco seasoning, onion, green chiles, monterey jack cheese and the secret ingredient crushed nacho chips. This meatloaf is packed full of flavor with a taco sauce glaze and melted cheese on
top. It is a family favorite and comes out perfect every time.

There is nothing I love more an easy dinner that I can just throw in the slow cooker that everyone will love and this meatloaf fits the bill.

I love that I can just throw everything in the slow cooker and have a delicious, flavorful dinner that everybody in my house really enjoys.  Whenever I find a dinner that everyone eats I get excited!  And for it to be in the slow cooker? That’s the best!

This meatloaf is a great spin on a classic meatloaf recipe that comes out perfect every time.  I just pop it in the slow cooker and let it do all the work for me and we have a deliciously hearty, comforting meal.

I love that you can customize this to your family’s taste, make it more spicy, add some corn or black beans, you can totally make this recipe to your family’s taste.  

The taco flavorings make this a great spin on a classic meatloaf! The crushed up doritos act as a binding agent but they also provide such a great taco flavor.  You can use any flavor you like, Cool Ranch would be amazing!

Can we also take a minute to talk about how this is a budget friendly dinner?  Everyone is feeling the pinch at the grocery store right now and you can’t get much cheaper than ground beef.  So this is a great dinner when you are trying to save a few pennies.

My favorite slow cooker for this recipe is this Hamilton Beach one.

Can I use a meatloaf mix?

Yes, most grocery stores sell a meatloaf mix of ground meat.  It usually consists of ground beef and ground pork.  I use lean ground beef but feel free to use your favorite mix for meatloaf.

What should I serve this with?

I love this over a pile of fluffy mashed potatoes or even white rice but it is also great served with this Bacon Pimento Cheese Potato Salad.

Can I add any spice to this?

You can add red pepper flakes, jalapeños or sriracha to give this a kick.

Ingredients used

  •  Lean ground beef-  Since we are using this in the slow cooker I like to use lean ground beef. 
  • Onion-  I prefer to use a sweet onion but you can use any onion you like. 
  • Chopped green chiles-  The canned kind is what you need for this recipe.  Do not worry they do not add heat, just flavor. 
  • Taco seasoning envelope-  You can use your own homemade taco seasoning but I just like to use an envelope of taco seasoning. 
  • Nacho cheese chips-  I use doritos but any brand will work just fine!
  • Shredded monterey jack cheese-  You can swap this out for any cheese you like, pepperjack would be great in this!
  • Eggs-  You need eggs to help bind everything together. 
  • Milk-  Keeps the meatloaf tender. 
  • Taco sauce-  You use this to top the meatloaf and it adds great flavor!
  • Colby jack cheese-  Sprinkle this on the top for a cheesy taco meatloaf. 
  • Toppings optional- scallions, tomatoes, sour cream, black olives, avocado, jalapeno

Mix up your meatloaf.

Cook for 4-6 hours.

How to make this Taco Meatloaf

FULL RECIPE BELOW
1. Line your slow cooker with heavy duty aluminum foil.
2. In a large bowl combine the ground beef, onion, green chiles, taco
seasoning, crushed chips, monterey jack cheese, eggs and milk.
3. Once everything is mixed thoroughly place into your slow cooker and pat down into the shape of the slow cooker, so it is even.
4. Spread your taco sauce on top and cover with lid.
5. Cook on high for 3 hours or low for 6 hours.

6. Right before serving top with the shredded colby jack cheese and let it melt.
7. Top with all your favorite taco toppings.
8. Serve!

  • ● 1/2 small onion, chopped
  • ● 4 ounces can chopped green chiles
  • ● 1 ounce taco seasoning envelope
  • ● 1 cup crushed nacho cheese chips (like doritos)
  • ● 1 cup shredded monterey jack cheese
  • ● 2 eggs
  • ● ½ cup milk
  • ● ½ cup taco sauce
  • ● 1 cup shredded colby jack cheese
  • ● Toppings optional- scallions, tomatoes, sour cream, black olives, avocado, jalapeno

Notes

● Store the leftovers in an airtight container for up to 3 days.
● You can use any shredded cheese you like for the meatloaf and to top it.
● You can add salsa instead of the green chiles if you prefer.
● You can use any flavor crushed tortilla chip you like, they have ranch and even spicy flavors that would be great in this dish.
● Serve over some yellow rice with some black beans on the side for a delicious meal.
