These Crack Chicken Stuffed Shells are such a great and flavorful easy dinner.  Shredded chicken mixed with a creamy ranch sauce, cheese, bacon and scallions are stuffed into pasta shells before being topped with more and baked to perfection.  This makes such a family friendly dinner.

Can I use any chicken?

Yes, you can use any shredded chicken. You can boil your own and shred it or shred a rotissiere chicken.

What can I add to these?

If you like you can add broccoli to these shells or even spinach would be great!

Can I add a little spice?

You can add red pepper flakes, jalapenos or sriracha to give this a kick.

Ingredients used

  • Jumbo pasta shells- you need the large ones you can stuff.  If you have trouble finding them you can use manicotti noodles.
  • Shredded chicken- boil and shred your own chicken or use a rotisserie chicken.
  • Butter- I like to use salted but you can use unsalted.
  • Flour- this helps thickens the sauce.
  • Chicken broth- use your favorite kind.
  • Heavy cream- makes the sauce luscious
  • Cream cheese- for the filling. Make sure its softened so it mixes in easier.
  • Envelope dry ranch mix- just the dry mix, don’t actually make the dip.
  • Colby jack cheese- shredded.  You can also use sharp cheddar.
  • Bacon- cooked and crumbled.  You can use microwave bacon to make this quicker.
  • Scallions- I love the pop of color and flavor these provide to the dish.
  • Ranch dressing and parsley for garnish-optional

How to make these Chicken Stuffed Shells

 

  1. FULL RECIPE BELOW
  2. Boil your pasta shells according to box directions, drain and set aside.
  3. In a saucepan melt the butter and whisk in the flour until it forms a paste.
  4. Whisk in the chicken stock and cream.
  5. Add in the cream cheese and ranch dressing and whisk until smooth.
  6. Place 1 cup of the sauce mix down the bottom of a 9×13 baking dish.
  7. In a large bowl combine the shredded chicken with half of the cheese, half of the bacon and half of the scallions.
  8. To the chicken mix add 1 cup of the ranch sauce.
  9. Stuff the shells and place into the bottom of your baking dish.
  10. Top the shells with the remaining ranch sauce.
  11. Top with the remaining cheese, bacon and scallions.
  12. Bake for 35-45 minutes until bubbly and golden.
  13. Drizzle with ranch dressing if desired.
  14. Serve!

  • 12 ounce box jumbo pasta shells
  • 2 cups of shredded chicken
  • ¼ cup butter
  • ¼ cup flour
  • 2 cups chicken broth
  • ½ cup heavy cream
  • 1 (8 ounce) block cream cheese
  • 1 (1 ounce) envelope dry ranch mix
  • 2 cups colby jack cheese, divided
  • 8 slices cooked crumbled bacon, divided
  • ¼ cup scallions, divided
  • Ranch dressing and parsley for garnish, optional

Instructions

  1. Preheat oven to 350 degrees.
  1. Boil your pasta shells according to box directions, drain and set aside.
  2. In a saucepan over medium heat melt the butter and whisk in the flour until it forms a paste.
  3. Whisk in the chicken stock and cream.
  4. Let bubble for 2 minutes.
  5. Add in the cream cheese and ranch dressing and whisk until smooth.
  6. Place 1 cup of the sauce mix down the bottom of a 9x13 baking dish.
  7. In a large bowl combine the shredded chicken with half of the cheese, half of the bacon and half of the scallions.
  8. To the chicken mix add 1 cup of the ranch sauce.

Notes

  • This is a great way to use up leftover chicken.
  • Rotisserie chickens are also perfect for this recipe.
