This Slow Cooker Stroganoff is full of flavor and I always love to make it when the weather starts to get chilly. This is a filling dish that is budget-friendly. The base of this soup is chicken and noodles and you can’t get more budget-friendly than a bag of noodles. It also uses mushrooms which can help bulk up a soup and make it go further.
This Chicken Stroganoff is full of flavor from the rich chicken, earthy mushrooms and pops of onion flavor. It goes perfectly over a bed of egg noodles but is also delicious over rice or mashed potatoes if you prefer. Plus the leftovers just get better and better!

This is great served with a little side salad and some soft bread but I like to serve it with these nice and fluffy Lunch Lady Rolls.

INGREDIENTS
- Chicken Broth – I prefer to use a low-sodium chicken broth for this recipe.
- Chicken Thighs – You can also use boneless chicken breasts or tenderloins.
- Ketchup – You only need a bit of this to add a little flavor.
- Onion Soup Mix – The dry kind in an envelope is what you need, it gives this dish soo much flavor.
- Mushrooms – These are optional, while they are traditional in stroganoff they are not everyone’s favorite and can be left out.
- Egg Noodles – This is traditionally served over egg noodles thought you could serve it over rice or mashed potatoes if you like.
- Cream Cheese – This provides a creamy base for this dish.
- Sour Cream – Sour cream adds a little tang and creaminess to the stroganoff.
