I love that this chicken salad comes together in minutes and it just packed full of flavor and delicious ingredients. I love that you can make the chicken salad ahead of time and stuff into the carrot shaped rolls when you are ready to serve.

I always love a good chicken salad and this is my favorite one to make for these little carrot shape rolls for Easter.  The chicken salad calls for hardboiled eggs making it a perfect dish to use up leftover hardboiled eggs from Easter. 

This chicken salad is full of flavor and a true make ahead dish.  The longer this sits the better and better it gets.  This can definitely be made the day before, just don’t stuff them into the rolls until right before serving. 

I love that you can customize this to your taste and likes.  You can add more veggies, make it spicy, you can totally make this recipe your own.

Can I use any veggies?

Yes, you could use any veggies you like in this chicken salad.  I like to keep it simple with a little celery and onion but you can add shredded carrots, grapes, almonds, anything!

Can I add spice?

Of course!! Add some diced jalapeños or red pepper flakes to give this chicken salad a kick. 

Can I make this ahead of time?

Definitely.  I like to make it the day before so the flavors really have time to marry.

Ingredients used

  • Cooked, shredded chicken- You can boil chicken or use a rotisserie chicken or any leftover chicken you have on hand. 
  • Red onion-  I like to use red onion for this as it is more mild and the flavor is really great.  You can use scallions for a more subtle onion flavor. 
  • Celery-  This adds a lot of crunch to this salad. 
  • Hardboiled eggs-  These add such great flavor to the chicken salad.
  • Mayonnaise-  Use a good quality mayo that you like. 
  • Garlic salt-  Garlic salt adds a great flavor and salt to the salad. 
  • Pepper-  Just a bit for flavor. 
  • Crescent rolls-  You need 2 eight count cans to make the carrot rolls. 
  • Parsley-  This makes the carrot tops.

How to make Chicken Salad Stuffed Crescents

  1. FULL RECIPE BELOW
  2. Preheat oven to 400 degrees.
  3. In a large mixing bowl combine the chicken, onion, celery, eggs, mayonnaise, garlic salt and pepper. 
  4. Set in fridge to chill.
  5. Meanwhile mold 16 (12 inch) sheets of aluminum foil into cone shapes.
  6. Slice each crescent roll triangle into strips.
  7. Wrap the strips around the molds making a carrot shape. 
  8. Bake for about 8 minutes until golden brown.
  9. Set aside to cool completely.
  10. Carefully remove the foil from inside the rolls.  You can use scissors to help.
  11. Stuff each crescent roll carrot with the chicken salad mixture. 
  12. Top with parsley to resemble a carrot top. 
  13. Serve!

  • ¼ small red onion, diced
  • 2 celery stalks, diced
  • 2 hardboiled eggs, chopped
  • 1 cup mayonnaise
  • ¼ teaspoon garlic salt
  • ¼ teaspoon pepper
  • 16 crescent rolls (2 eight count cans)
  • Parsley

Instructions

Notes

  • Store the leftovers in the fridge for up to 3 days.
  • Be patient trying to remove the foil from the rolls, they will come out.
  • You can also use a foil wrapped ice cream cone as your mold for the rolls.
  • You can season the chicken salad up anyway you like.  
  • You can fill these with any salad you like, tuna or egg salad would also be delicious here.
