You can freeze this after cooking. Just pop it in a freezer-safe bag and freeze for up to 3 months.
Can I use any protein?
Yes, you can use any meat you like and it will work with this chili, I do like to use chicken breasts because I always have them on hand but it is also great with chicken thighs and would be yummy with ground beef or sausage as well. You could even use rotisserie chicken.
What should I serve this with?
Chili is always good with some crackers, tortilla chips, grilled cheese, salad or some cornbread on the side. This one is actually really good with this Classic Corn Casserole.
Can I make this spicier?
You can add red pepper flakes or sriracha, add fresh or canned jalapenos to the chili while cooking or top with jalapeno slices before serving to give this more kick.
INGREDIENTS USED
- Chicken breasts – You can also use boneless chicken thighs for this recipe, I like the
skinless chicken breasts. You can also use ground chicken.
- Chicken broth – I like to use low sodium.
- Navy beans – You can use any white bean you like, or actually any bean would work great in this recipe, white beans, black beans, chili beans, pinto beans.
- Tomatoes with green chilies – This adds a lot of flavor, the green chiles do not add heat just a nice flavor.
- Tomato sauce – This helps give the chili a nice rich base.
- Buffalo wing sauce – I like to use Franks hot sauce but use your favorite.
- Onion powder – You can also use minced dried onion.
- Garlic salt- You could use fresh garlic if you prefer.
- Ranch dressing seasoning – This is the dry ranch dressing mix that you buy in an envelope.
- Cream cheese – Cream cheese gives this chili a nice creamy texture.
- Cheddar cheese – You can use any flavor cheese you prefer. Pepperjack would add a little more kick. Some bleu cheese crumbles would also be nice.

How to make Slow Cooker Buffalo Chicken Chili
- To your slow cooker add the chicken, chicken broth, navy beans, tomatoes with chilies, tomato sauce, wing sauce, onion powder, garlic salt, and ranch dressing.
- Cover and cook on low for 6 hours or high for 4 hours.
- Take out the chicken and shred.
- To the slow cooker add the shredded chicken, cubed cream cheese and cheddar cheese.
- Cover and cook another 15 minutes or until both cheeses are melted.
- Top with more cheese and scallions if you prefer.
- Serve!
- Store leftovers in an airtight container for up to 3 days.

- 1 (15 ounce) can navy beans, rinsed
- 1 (10 ounce) can tomatoes with green chilies
- 1 (8 ounce) can tomato sauce
- ½ cup buffalo wing sauce (I used Franks)
- ½ teaspoon onion powder
- ½ teaspoon garlic salt
- 1 (1 ounce) envelope ranch dressing seasoning
- 8 ounces cream cheese, softened and cubed
- 1 cup shredded cheddar cheese
- Scallions for garnish
