This Slow Cooker Buffalo Chicken Chili is a perfect blend of chili and buffalo chicken dip.  Full of flavor and perfect for chilly nights this chili combines tender chicken and beans with a creamy buffalo sauce.  Top this with a little cheese and you have a fabulous hearty dinner everyone will love.

 

I love delicious and hearty dinners that I can just throw in the slow cooker and I know that everyone will love and this Buffalo Chicken Chili is a family favorite.

I love that I can just throw everything in the slow cooker and have a delicious, flavorful chili that everyone really likes.  Whenever I find a dinner that everyone in my house eats that is amazing because I have some picky eaters!  And for it to be in the slow cooker? That’s a double win! I already know they love buffalo chicken dip so they fell in love with this chili. 

This is also always a hit at get-togethers because who doesn’t love buffalo chicken dip and now it’s a chili!?  I like to serve this alongside some tortilla chips and let everyone customize their own bowl.

This has the same ingredients as that delicious buffalo chicken dip but a few extra ones to turn it into a cozy chili.

All the flavors really come together in the slow cooker all day and create the perfect chili when you are looking for something a little different than your classic chili. 

I love that you can customize this to your family’s taste, make it spicier, switch up the beans, add your favorite seasonings, add corn, you can totally make this recipe your own.  You can also top this with anything you like. I like to just add scallions but you can top it with black olives, jalapenos, cilantro, sour cream or avocado. 

This is also an affordable dinner, beans and chicken are pretty budget-friendly and the leftovers are phenomenal.

Can I freeze this?

You can freeze this after cooking.  Just pop it in a freezer-safe bag and freeze for up to 3 months. 

Can I use any protein?

Yes, you can use any meat you like and it will work with this chili, I do like to use chicken breasts because I always have them on hand but it is also great with chicken thighs and would be yummy with ground beef or sausage as well.  

What should I serve this with?

Chili is always good with some crackers, tortilla chips, grilled cheese, salad or some cornbread on the side.  This one is actually really good with this Classic Corn Casserole.

Can I make this spicier?

You can add red pepper flakes or sriracha, add fresh or canned jalapenos to the chili while cooking or top with jalapeno slices before serving to give this more kick.

INGREDIENTS USED

  • Chicken breasts –  You can also use boneless chicken thighs for this recipe.
  • Chicken broth – I like to use low sodium. 
  • Navy beans –  You can use any white bean you like, or actually any bean would work great in this recipe. 
  • Tomatoes with green chilies –  This adds a lot of flavor, the green chilies do not add heat just a nice flavor. 
  • Tomato sauce –  This helps give the chili a nice rich base. 
  • Buffalo wing sauce –  I like to use Franks hot sauce but use your favorite. 
  • Onion powder – You can also use minced dried onion. 
  • Garlic salt- You could use fresh garlic if you prefer. 
  • Ranch dressing seasoning – This is the dry kind that you buy in an envelope. 
  • Cream cheese –  Cream cheese gives this chili a nice creamy texture. 
  • Cheddar cheese – You can use any flavor cheese you prefer.  Pepperjack would add a little more kick.

How to make Slow Cooker Buffalo Chicken Chili

  1. FULL RECIPE BELOW
  2. To your slow cooker add the chicken, chicken broth, navy beans, tomatoes with chilies, tomato sauce, wing sauce, onion powder, garlic salt, and ranch dressing. 
  3. Cover and cook on low for 6 hours or high for 4 hours. 
  4. Take out the chicken and shred.
  5. To the slow cooker add the shredded chicken, cubed cream cheese and cheddar cheese.
  6. Cover and cook another 15 minutes or until both cheeses are melted. 
  7. Top with more cheese and scallions if you prefer.
  8. Serve!

Ingredients

  • 1 pound boneless skiness chicken breasts
  • 1 (14.5 ounce) can chicken broth
  • 1 (15 ounce) can navy beans, rinsed
  • 1 (10 ounce) can tomatoes with green chilies
  • 1 (8 ounce) can tomato sauce
  • ½ cup buffalo wing sauce (I used Franks)
  • ½ teaspoon onion powder
  • ½ teaspoon garlic salt
  • 1 (1 ounce) envelope ranch dressing seasoning
  • 8 ounces cream cheese, softened and cubed
  • 1 cup shredded cheddar cheese
  • Scallions for garnish

Instructions

  1. To your slow cooker add the chicken, chicken broth, navy beans, tomatoes with chilies, tomato sauce, wing sauce, onion powder, garlic salt, and ranch dressing. 
  2. Cover and cook on low for 6 hours or high for 4 hours.
