This Beef Stroganoff soup tastes just like hearty beef stroganoff but in soup form and what is better than that on a cold and chilly night. Also the leftovers just get better and better! This soup is my favorite in the colder months.

You can freeze this after cooking. The pasta might not be quite the same texture but it should still taste delicious!

Yes, you can use cubed up pork roast or chicken thighs.
What should I serve this with?
This is a great dish on it’s own but its fabulous with a little side salad and it is really delicious with some of these Homemade Hawaiian Rolls for dunking.
What else can I add?
This is a great soup you can add any veggies you like to, potatoes and carrots would be great, peas would be fabulous, even corn is amazing in this.
Ingredients used
- Stew Beef – You can even cube up a chuck roast yourself for this.
- Mushrooms – I like to use just brown button mushrooms for this but any mushrooms will work.
- Onion Soup Mix – I use just the onion soup mix but you can also use the beefy onion version.
- Garlic – You can use fresh or jarred.
- Tomato Paste – You just need a bit of this to add richness.
- Worcestershire Sauce – This adds a ton of flavor to the dish.
- Beef Stock – I like to use low sodium for this dish.
- Egg Noodles – I like to use broad or wide noodles, but any kind will work fine!
- Sour Cream – Make sure to add this at the end so it doesn’t curdle.
- Flour – Helps thicken the soup.
How to make Slow Cooker Beef Stroganoff Soup
- FULL RECIPE BELOW
- Into your slow cooker add the stew beef, mushrooms, onion soup mix, garlic, tomato paste, worcestershire sauce and beef stock.
- Stir.
- Cover and cook on low for 6 hours or high for 4.
- 30 minutes before serving add your noodles to the slow cooker and stir.
- Cover and cook until the noodles are al dente.
- Into a small bowl whisk together the sour cream and flour.
- Add 1 cup of the liquid from the soup to the sour cream mixture and whisk until smooth.
- Stir the sour cream mixture into the slow cooker and let cook another 10 minutes.
- Serve!
