I love delicious and easy dinners that I can just throw in the slow cooker and I know that everyone will love and this Beef Stroganoff Soup is one of our favorites.

I love that I can just throw everything in the slow cooker and have a delicious, flavorful dinner that everyone really enjoys.  Whenever I find a dinner that everyone in my house likes that is amazing because I have some picky eaters but they love this soup!  And for it to be in the slow cooker? That’s a double win!

This Slow Cooker Soup is full of flavor and I love to make it when the weather starts to get chilly.  This is a hearty dish that is budget-friendly. The base of this soup is stew beef and noodles and you can’t get cheaper than a bag of noodles.  It also uses mushrooms which can help bulk up a soup inexpensively.

This Beef Stroganoff soup tastes just like hearty beef stroganoff but in soup form and what is better than that on a cold and chilly night.  Also the leftovers just get better and better!  This soup is my favorite in the colder months. 

This soup is so beef and flavorful.  It is comforting and hearty, just like a hug in a bowl.  You can also stretch it more by adding veggies like potatoes or carrots.

I love that you can customize this to your family’s taste, you can swap out the mushrooms or even swap out the stew beef for chicken thighs.  

This is great served with a little side salad and some french bread or crackers for dipping in the thick, rich soup. It also is the perfect dipper for grilled cheese.  I like to serve it with these nice and warm Lunch Lady Rolls

Everyone is feeling the pinch with the grocery bill right now and you can’t get much cheaper than pasta and a few other ingredients.  So this is a fabulous dinner when you are trying to save a few pennies and it makes a ton!  The leftovers are amazing!

Can I freeze this?

You can freeze this after cooking.  The pasta might not be quite the same texture but it should still taste delicious!

Any substitutes for the stew beef?

Yes, you can use cubed up pork roast or chicken thighs.

What should I serve this with?

This is a great dish on it’s own but its fabulous with a little side salad and it is really delicious with some of these Homemade Hawaiian Rolls for dunking. 

What else can I add?

This is a great soup you can add any veggies you like to, potatoes and carrots would be great, peas would be fabulous, even corn is amazing in this.

Ingredients used

  • Stew Beef – You can even cube up a chuck roast yourself for this.
  • Mushrooms –  I like to use just brown button mushrooms for this but any mushrooms will work.
  • Onion Soup Mix –  I use just the onion soup mix but you can also use the beefy onion version.
  • Garlic – You can use fresh or jarred.
  • Tomato Paste –  You just need a bit of this to add richness.
  • Worcestershire Sauce –  This adds a ton of flavor to the dish. 
  • Beef Stock –  I like to use low sodium for this dish. 
  • Egg Noodles – I like to use broad or wide noodles, but any kind will work fine!
  • Sour Cream –  Make sure to add this at the end so it doesn’t curdle.
  • Flour – Helps thicken the soup.

How to make Slow Cooker Beef Stroganoff Soup

 

  1. FULL RECIPE BELOW 
  2. Into your slow cooker add the stew beef, mushrooms, onion soup mix, garlic, tomato paste, worcestershire sauce and beef stock. 
  3. Stir.
  4. Cover and cook on low for 6 hours or high for 4.
  5. 30 minutes before serving add your noodles to the slow cooker and stir. 
  6. Cover and cook until the noodles are al dente. 
  7. Into a small bowl whisk together the sour cream and flour.
  8. Add 1 cup of the liquid from the soup to the sour cream mixture and whisk until smooth.
  9. Stir the sour cream mixture into the slow cooker and let cook another 10 minutes.
  10. Serve!

Ingredients

  • 1 pound stew beef
  • 8 ounces mushrooms, sliced
  • 1 envelope onion soup mix
  • 3 cloves garlic minced
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 6 cups low-sodium beef stock
  • 2 cups egg noodles dry, uncooked
  • ½ cup sour cream
  • 2 tablespoons flour
  • Parsley for garnish

Instructions

  1. Into your slow cooker add the stew beef, mushrooms, onion soup mix, garlic, tomato paste, worcestershire sauce and beef stock. 
  2. Stir.
  3. Cover and cook on low for 6 hours or high for 4.
  4. 30 minutes before serving add your noodles to the slow cooker and stir. 
  5. Cover and cook until the noodles are al dente. 
  6. Into a small bowl whisk together the sour cream and flour.
  7. Add 1 cup of the liquid from the soup to the sour cream mixture and whisk until smooth.
  8. Stir the sour cream mixture into the slow cooker and let cook another 10 minutes.
  9. Serve!

Notes

  • Store leftovers in the freezer for up to 3 months, in an airtight container.
  • You can skip the mushrooms and use carrots or potatoes instead. 
  • You can use any short pasta but egg noodles are delicious!
  • If you want your soup thicker you can mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir that into the soup as well.
