These Slow Cooker Roast Beef Po Boys are one of our absolute favorites.  Beef slow cooks all day in a flavorful sauce of brown gravy, au jus, onion powder, celery seed and butter until it falls apart.  Then it gets piled on fluffy white buns with lettuce and tomato.  It is easy and always a crowd pleaser.

There is nothing I love more an easy dinner that I can just throw in the slow cooker that everyone will love and these Roast Beef Po Boys fit the bill.

I love that I can just throw everything in the slow cooker and have a delicious, flavorful dinner that everyone really enjoys.  Whenever I find a dinner that everyone in my house eats I get excited!  And for it to be in the slow cooker? That’s a double win!

My husband is from Louisiana so he often craves food from his hometown and he loves these po boys.  Since he is allergic to shellfish he cannot have the traditional shrimp po boys but he loves this roast beef version and so do I!

This meat just falls apart it is so tender.  It slow cooks all day to perfection in brown gravy, au jus mix, onion powder and celery seed.  You could use fresh onion and celery but I do not love them in this sandwich.  The tender, flavorful beef gets piled high in soft, fluffy buns with lettuce and tomato.  So simple but so delicious!

I love that you can customize this to your family’s taste, you can add cheese if you like, add a bit of mustard, you can totally make this recipe your own.

Can we also take a minute to talk about how budget-friendly this dinner is?  Everyone is feeling the pinch with the grocery bill right now and this dinner only requires a few ingredients and makes plenty for leftovers. Sandwiches or grilled cheese with this beef the next day are amazing!  So this is a fabulous dinner when you are trying to stretch your dollar.

How should I store this?

I would store the meat in an airtight container in the fridge for up to 3 days.  You can rewarm it before making the subs or it’s great even cold.

What should I serve this with?

I love this served with fries, onion rings or even just chips but it is also great with this Bacon Pimento Cheese Potato Salad.  

Can I make this spicy?

You can add red pepper flakes, jalapenos or sriracha to give this a kick.

Ingredients used

  • Chuck Roast – There really isn’t much you can substitute for this, it really should be a chuck roast that you are using for this recipe.
  • Brown Gravy Mix – You can use low sodium if you like. 
  • Au Jus Mix – This helps give this dish such a rice flavor.
  • Onion Powder – You could use fresh onion but I like using the powder.
  • Celery Seed – You could also use fresh celery but the celery seed or celery salt works great!
  • Beef Broth – Regular or low sodium work perfectly.
  • Butter – Butter just adds a little richness to the meat.
  • Soft Sub Rolls – I like to use soft, fluffy white rolls.
  • Mayo – You can have this sub without a smear of mayo on the sub.
  • Lettuce – Iceberg, romaine or butter will work perfectly here.
  • Tomato – Make sure you salt and pepper your tomatoes.

How to make Slow Cooker Roast Beef Po Boys

 

  1. FULL RECIPE BELOW
  2. In your slow cooker add the chuck roast.
  3. To a mixing bowl or cup add the brown gravy mix, au jus mix, onion powder, celery seed, black pepper and beef broth.
  4. Stir to combine.
  5. Pour this mixture over the beef roast. 
  6. Top with the butter.
  7. Cook on low for 6-8 hours or high for 4-6 hours until the beef falls apart. 
  8. Remove the beef from the slow cooker and shred.
  9. Remove all the liquid from the slow cooker except for about 1 cup.
  10. You can reserve the rest of the liquid for dipping if you like. 
  11. Toss the shredded beef with the 1 cup liquid in the slow cooker.
  12.  Pile onto soft buns with mayo, lettuce and tomato.

  • 1 (1 ounce) envelope brown gravy mix
  • 1 (1 ounce) envelope au jus mix
  • 1 teaspoon onion powder
  • 1 teaspoon celery seed
  • 1 teaspoon black pepper
  • 2 cups beef broth
  • 4 tablespoons butter
  • Soft sub rolls
  • Mayo
  • Lettuce
  • Tomato

Instructions

  1. In your slow cooker add the chuck roast.
