How to Make Raspberry Brownie Bombs

  1. In a large bowl, use an electric mixer to combine the crumbled brownies and softened cream cheese until smooth and fully mixed.

  3. Take one portion and gently wrap it around a raspberry, carefully rolling it into a ball so the raspberry is fully enclosed.

  4. Place each brownie bomb onto a parchment-lined baking sheet.

  5. Transfer the tray to the freezer and chill for 1 hour, or until firm.

  6. In a microwave-safe bowl, melt the semisweet chocolate chips in 30-second intervals, stirring between each, until smooth.

Raspberry Brownie Bombs are a delicious easy dessert recipe you can whip up in no time.  Brownies mix with cream cheese and wrap around a tart raspberry before getting dipped in chocolate and decorated.  These are always a hit!

Ingredients

  • 3 cups crumbled brownies
  • 8 ounces cream cheese softened
  • 12 raspberries
  • 12 ounces semisweet chips
  • Red melting chocolate or sprinkles for decor

Instructions

  1. In a large bowl using an electric mixer combine the brownies and the cream cheese until combined and smooth. 
  2. Separate the mix into 12 equal amounts and wrap each one around 1 raspberry carefully, rolling into a ball.
  3. Place on a parchment lined tray.
  4. Place in the freezer for 1 hour to chill.
  5. In a microwave safe dish in 30 second intervals melt the chocolate chips until smooth and melted.
  6. Dip each of the bombs into the chocolate and place back on the parchment lined tray. 
  7. If using sprinkles immediately sprinkle before the chocolate sets.
  8. If using red melts, melt them in the microwave using the same method as above.
  9. Place the melted red candy melts in a ziploc bag with the corner snipped off.
  10. Drizzle the red chocolate all over the bombs. 
  11. Once the chocolate is set, serve!

  • You can add a little oil to your chocolate chips if they are not melting smooth enough. 
  • You can use store bought brownies or homemade brownies.
