Can I use other cream cheese flavors?

Of course!! I used plain cream cheese but you can use chive cream cheese or garden vegetable cream cheese.  They even have jalapeno cream cheese that would be great in this dip!

What should I serve this with?

I like serving it with pretzels, crackers, veggies even pita chips would be really good with this dip.

Can I make this creamy veggie dip appetizer ahead of time?

You can make this ahead of time.  This will be good to make the day before and it will stay perfect in the refrigerator until ready to serve.

Ingredients for this creamy ranch dip

  • Cream cheese- Softened to room temperature so it mixes easily. I like to use full fat cream cheese but you can use low fat too.
  • Sour cream-  This adds a little tang to the dip and makes it creamy and dippable.
  • Dry ranch mix- This ranch seasoning is where all the flavors come from, you can use regular ranch mix or you can use the zesty version or southwest version.
  • Mexicorn-  I like to use the mexicorn because it has peppers in it and adds a bit more flavor. You can use just regular sweet corn if you like.  This is also perfect with fresh corn.
  • Black beans-  You want to make sure these are rinsed and drained.  You can also use the seasoned black beans if you like. If you don’t like beans you can substitute sliced black olives.
  • Red bell pepper-  Make sure you dice this red pepper finely.  You can use any color crunchy bell peppers you like. 
  • Jalapeno pepper- Finely diced.  This jalapeño pepper adds spice to the dish, you can leave it out if you don’t like anything spicy or substitute it for green chiles. You just like a little heat to it.

How to make this Poolside Dip

  2.  In a large bowl using an electric mixer combine the softened cream cheese, sour cream and dry ranch mix.
  3. To the creamy base add the mexicorn, black beans, diced red bell pepper and diced jalapenos.
  4. Stir everything together and serve with raw veggies, chips, corn chips or crackers for serving!
  5. Serve!

  • 15 ounce can black beans, rinsed and drained

  • 1 jalapeno, finely diced

Instructions
