This Hawaiian Macaroni Salad is the perfect side dish for the upcoming warmer weather.  This macaroni salad is light, creamy and has a perfectly tangy, sweet dressing.  This pasta salad is simple and delicious.  Elbow pasta, mayonnaise, milk, sugar, apple cider vinegar, carrots and green onion make up this delicious, refreshing salad.

There is nothing I love more an easy summer side dish that I can just throw together quickly that gets better as it is sits.

I love that this pasta salad comes together in minutes and it just packed full of flavor and delicious ingredients. Whenever I find a new summer side dish that can be made ahead I love it!

Summer is full of cookouts and bbqs and pool parties and this Hawaiian style macaroni salad is always a hit.  A change up from the classic macaroni salad that you are used to. 

This pasta salad is full of flavor and a true make ahead dish.  The longer this sits the better and better it gets.  This can definitely be made the day before.  I like to make it at the beginning of the week and eat on it all week long. 

I love that you can customize this to your taste and likes.  You can add more veggies, make it spicy, you can totally make this recipe your own.

Ingredients used for this creamy pasta salad

  • Elbow macaroni noodles- I like to use the dry elbow macaroni jumbo kind but you can use any small pasta shape you like.
  • Mayonnaise- This is the base of the macaroni salad so use a good quality mayonnaise for the creamy dressing.
  • Milk- You just need a bit to thin out the sauce. I like to use whole milk.
  • Apple cider vinegar- This adds a great tangy dressing to the macaroni salad.
  • Sugar-  Adds a bit of sweetness that sets this pasta salad apart from the others.
  • Salt and black pepper- You can add these to your taste.
  • Carrot- Shredded.  This adds sweetness and crunch to the macaroni salad.
  • Scallions- Green onions add a subtle onion flavor and color this salad.

How to make this Hawaiian Pasta Salad

  1. Boil your pasta according to the package directions till al dente. Drain noodles and set aside. 
  2. In a large bowl whisk together the mayonnaise, milk, vinegar, sugar, salt, and pepper in a large bowl. 
  3. Add the hot pasta, carrots, and green onions.
  4. Give everything a good stir to combine. 
  5. Cover and refrigerate for 1 hour to cool.  The longer this sits the better! I love eating it the next day.
  6. Store leftovers in an airtight container container for up to 3 days.

  • 8 ounces elbow macaroni noodles, I like to use the jumbo kind
  • 1 1/4 cup mayonnaise
  • 1/4 cup milk
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded carrot
  • 4 scallions, sliced

Instructions
