I always love finding easy but comforting dinners that the whole family will love and that is why I love this Cheesy Sausage Pasta.  This is such an easy weeknight dinner that is always a family favorite. It is quick, easy, filling and all comes together in one pot. 

Sausage, pasta, tomatoes, green chiles all cook up in a flavorful cheesy sauce.  These little swirly noodles cook right in the same pot so you only have one dish to clean! This is the ultimate comforting dinner!

Cheesy pasta is always picky eater approved and this one has sausage and a little kick making it everyone’s favorite.

It is so delicious and cheesy and the sausage and green chiles give it so much flavor without making it spicy and the cheese and pasta make it so comforting.  It comes together so quick and is perfect for those busy weeknights.

Grocery prices have been a little crazy lately and we could all use a few budget-friendly dinners and this Cheesy Sausage Pasta is perfect!  Pasta and smoked sausage are the base of this dish with just other ingredients making this dish great for when you want to stretch your dollar.  Plus the leftovers are so good the next day. 

I love to serve this with these Lunch Lady Rolls and dinner is done!

Ingredients used

  • Smoked Sausage –  Use any kind you like, andouille will add a little more spice, regular smoked sausage is what I use.  You can also use turkey or chicken smoked sausage. 
  • Onion – I like to save a little time and use frozen but you can use what you have on hand.
  • Chicken Broth – I prefer the low-sodium kind.
  • Tomatoes with Green Chiles –  I promise this does not add heat, just great flavor to the dish. 
  • Heavy Cream –  This makes the dish rich and creamy.
  • Campanelle Pasta –  You can use any short pasta.
  • Shredded Pepperjack Cheese –  This gives this dish great flavor and again does not make it too spicy at all!
  • Scallions – These also add great flavor but can be optional.

This One Pot Pasta is easy to make

Just start with a couple of ingredients.

Brown the sausage and onions.

Add your pasta to the pot.

Add the chicken stock, cream and tomatoes.

Once cooked stir in the cheese to melt.

Top with a little more cheese and scallions.

Once the cheese is all melted dinner is done!

Directions

  1. FULL RECIPE BELOW 
  2. In a large skillet over medium heat add the sausage and onion. 
  3. Brown the sausage and onion lightly. 
  4. To the pan add your chicken broth, tomatoes, heavy cream and pasta.
  5. Bring everything up to a boil, cover and reduce heat to low.
  6. Cook for 12-15 minutes until the pasta is tender.
  7. Stir in 1 ½ cups of the shredded pepperjack cheese.
  8. Add salt and pepper to taste.
  9. Top with the remaining cheese and few sliced scallions.
  10. Once the cheese on top is melted serve!

Is this dish spicy?

You may think with the green chiles and pepperjack cheese that this is a spicy dish, I promise you it is not.  It does have a little spicy flavor but nothing my kids can’t handle but there are ways to modify this if you don’t want any spice in it.  You can use regular diced tomatoes instead of the ones with green chiles.  You can also use cheddar cheese instead of pepperjack. 

What is the best pasta for this?

I like using a fun campanelle pasta but any short pasta like shells or penne would be great!  My kid love it with bowtie noodles!

Can I use any sausage?

Of course!  I use just regular smoked sausage but if you want to make things spicy use an andouille sausage.  You can also use turkey or chicken smoked sausage too.

  • 1 lb smoked sausage, slicced
  • Half of a small onion, diced
  • 2 cups chicken broth
  • 1 (10 ounce) can tomatoes with green chiles
  • 1/2 cup heavy cream
  • 8 ounces campanelle pasta
  • 2 cups shredded pepperjack cheese
  • Scallions for garnish

Instructions

  1. In a large skillet over medium heat add the sausage and onion. 
  2. Brown the sausage and onion lightly. 
  3. To the pan add your chicken broth, tomatoes, heavy cream and pasta.
  4. Bring everything up to a boil, cover and reduce heat to low.
  5. Cook for 12-15 minutes until the pasta is tender.
  6. Stir in 1 ½ cups of the shredded pepperjack cheese.
  7. Add salt and pepper to taste.

Notes

  • Store leftovers in the refrigerator for up to 3 days.
  • You can add chopped bell peppers to the sausage and onion if you like.
  • You can use hot tomatoes and green chiles for more heat.
  • You can also use spicy smoked sausage like andouille if you like.
