Hey y’all, it’s Fall!! It is my favorite time of year!!! Who doesn’t love the crisp evening air where you can smell Fall in the breeze? The crunch of leaves on the sidewalk. The way the days get shorter basking the evening in a cozy gold glow. What is not to love about Fall?

Once September first rolls around I start putting out the pumpkins, dusting off my boots, pulling out the quilts and of course start fall baking.

Fall baking is my favorite kind of baking. It fills your house with a sweet cinnamony warmth that is so inviting.

This Fall when I was shopping at Walmart for a few more pumpkins to add to the porch and to replenish my Fall baking supplies I came across these Great Grains® Crunchy Pecan Cereal which are delicious for breakfast and amazing in recipes!

I picked up three fabulous Great Grains® Cereal because I just couldn’t choose between their amazing flavors! Great Grains® Cranberry Almond Crunch has pops of cranberry, crunchy almonds, and flakey multigrain clusters which I love to enjoy on a blustery fall morning.

My mom can’t get enough Great Grains® Banana Nut Crunch with it’s walnuts, almonds, and dried bananas which make a spectacular flavor combo.

For today’s recipe I chose Great Grains® Crunchy Pecan which has perfectly crunchy pecans that take these Sweet Potato Pies to the next level!

So let’s get to it! While sometimes I want to spend hours just baking elaborate treats, I also love being able to just whip up a quick dessert that doesn’t take a lot of time or ingredients. These mini pies are the perfect quick treat!

Crescent roll dough and sweet potato pie filling ensure these pies can be ready for the oven in just minutes! Great Grains® Crunchy Pecan Cereal provides a sweet crunch for the top that really takes these over the top and makes them even more delicious!

Mini Sweet Potato Pies

Ingredients

• Two cans crescent roll dough
• 1 can sweet potato pie filling
• 2 eggs
• 2/3 cup evaporated milk
• Great Grains® Crunchy Pecan

Instructions

1. Preheat oven to 350
2. Lightly grease a mini muffin tin
3. Mix the pie filling with the eggs and milk
4. Cut each can of crescent roll dough into 24 squares
5. Place one square in each tin
6. Place 1 tablespoon filling in each muffin cup
7. Top with a sprinkle of Great Grains® Crunchy Pecan
8. Bake 15-18 minutes until dough is golden brown
9. Cool and serve!
