Can I use other chocolate?
Of course! I like to use the regular chocolate but you can definitely use white almond bark just keep the amount the same. You can switch up the colors of the candy melts too.
What else can I add to these?
You can definitely add some mix-ins. You can use any of your favorite nuts like peanuts, almond or cashews. Ypu can also top this with flaky sea salt.
How long do these stay fresh?
This candy stays fresh in an airtight container at room temp for up to 7 days.
Ingredients
- Cornflakes- I like to use the unfrosted cornflakes as the frosted ones would be too sweet.
- Butter- You can use salted butter or unsalted butter, I use unsalted.
- Light brown sugar- This provides that caramel flavor.
- Chocolate almond bark- This is the topping and you can use any chocolate you like.
- Red candy melts- Just for drizzling. You can use any color you like.
- Green candy melts- Just for drizzling. You can use any color you like.
- Christmas sprinkles- These are optional but I love the pop of color and festive look these give.
Gather your ingredients.
In a pot melt the butter and brown sugar.
Mix with the cornflakes and pour out onto a sheet pan.
Bake the cornflake mixture.
Melt chocolates.
Pour chocolates on top of brittle.
Serve!
How to make Christmas Cornflake Brittle
- Preheat the oven to 350 degrees.
- Line a baking sheet with parchment paper and set aside.
- In a large mixing bowl place your cornflakes.
- In a heavy bottomed pan over medium heat add the butter and brown sugar.
- Cook for about 2 minutes until the butter melts and the mixture comes to a simmer.
- Let the mixture bubble for 2 minutes.
- Immediately pour the mixture over the cornflakes.
- Stir until all the cornflakes are coated.
- Spread the coated cornflakes evenly onto the prepared tray.
- Bake for 12-15 minutes until just golden brown.
- In a microwave safe bowl in 30 second intervals melt the chocolate almond bark until melted and smooth.
- Spread over the brittle.
- In a microwave safe bowl melt the red candy melts in 30 second intervals until smooth and melted.
- Repeat with the green candy melts.
- Drizzle the red and green melted chocolate over the brittle and swirl gently with a knife.
- Top with sprinkles if desired.
- Let cool completely and break into pieces.
- Serve!
