Chicken Fajita Hash is my new favorite thing to grill! Tender marinated chicken on top of grilled potatoes and veggies, yum!

Who’s ready for summer grilling? I know I am! It gets hot in Virginia, surprise, surprise, and I love cooking outside as much as possible. Of course I also love meals that are quick and delicious. This one gets all the check marks. An easy marinade made with Mazola® Corn Oil and you can get this dinner done, start to finish, in 30 minutes. And a clinical study showed Mazola Corn Oil reduces cholesterol 2x more than extra virgin olive oil. (To learn more about this claim, visit Mazola.com.)

There is just something about standing outside with the smell of the grill in the air, the kids running around the front yard and something delicious cooking on the grill that screams summer. We often get a little bored of the same old hamburger and hot dogs so I like to look for different grilling recipes that I know my whole family will enjoy and that are easy. This Chicken Fajita Hash has quickly become a family favorite.

I also use Mazola Corn Oil for all my grilling needs because it has a high smoke point (450˚ F) which makes it great for grilling and stir frying at high temperatures.Chicken Fajita Hash is my new favorite thing to grill! Tender marinated chicken on top of grilled potatoes and veggies, yum!

I also really like that Mazola Corn Oil has more cholesterol-blocking plant sterols than other cooking oils* – 4x more than olive oil, 3x more than vegetable (soybean) oil, and 1.3x more than canola oil. Clinical studies indicate that when consumed as part of a diet low in saturated fat and cholesterol, plant sterols can help reduce the absorption of cholesterol in the gut. How amazing is that?!

This recipe is one of my favorite swaps, tender lean chicken is marinated in spices and Mazola Corn Oil and grilled to perfection. Then instead of piling that fabulous chicken in a tortilla and topping with heavier ingredients like sour cream and cheese I keep it light by serving it on top of grilled potatoes and peppers and onions, so flavorful and so delicious!

This Chicken Fajita Hash takes just minutes to make and the marinade makes the chicken out of this world delicious. This one is a real crowd pleaser and I love how quick it comes together with just a few ingredients.Chicken Fajita Hash is my new favorite thing to grill! Fresh onions and peppers, baby potatoes and lean chicken tenders all come together on the grill to create this amazing dish. We just love and the flavor is incredible!! Add on a few slices of avocado or a bit of salsa and dinner is done!

So this summer swap out some of your heavier ingredients for lighter ones including this delicious Mazola.com! It has a variety of uses include baking, grilling, sautéing, stir frying, or mixing up a marinade or dressing so make sure you are stocked up for all your summer recipes!
