This Caramel Apple Cheesecake is going to be your go to dessert all Fall long!  Perfect for entertaining this luscious cheesecake combines a graham cracker crust, creamy brown sugar cheesecake topped with spiced caramel apples.  This is such a delicious dessert that is sure to impress.

There is nothing I love more than a rich and decadent caramel dessert and this cheesecake is sinful!  It starts with an easy crust made from graham crackers so you know it’s going to be good!

Everyone loves caramel apples, such a classic treat.  This cheesecake combines that graham cracker crust, creamy cheesecake and caramel apples.  

This cheesecake is easy and impressive.  You could also make these into an easy mini cheesecake recipe by using mini springform pans. This gets topped with a fabulous caramel apple topping that is delicious and lightly spiced with cinnamon.  This is one of my favorite fall desserts. This cheesecake comes out perfect everytime and you don’t even have to use a water bath because any cracks in the top get covered with those delicious apples. I am a sucker for easy cheesecake recipes.

This has all those flavors of Fall in one deliciously fabulous cheesecake.  This is always a showstopping dessert and everyone loves it.  It looks great and tastes amazing.  It is the perfect cheesecake to take to any party or make for any event.  Perfect for Thanksgiving dinner! The only downfall of this recipe is how fast it will disappear! You might want to make two!

Can I use any cookies for the crust?

Yes!  You can use vanilla oreos, vanilla wafers or cinnamon graham crackers.  A gingersnap cookie crust would be delicious too!

Can I just use canned apple filling?

Yes! Just use canned apple pie filling instead of making your own cooked apples. 

How to store this cake?

You can store this in an airtight container in the refrigerator for up to 3 days.

Ingredients used

  • Graham crackers-  This gives you a classic cheesecake crust.  You can use honey graham crackers or cinnamon graham crackers to make the graham cracker crumbs. You can crush these up in a bag or food processor.
  • Cream cheese –  Make sure you soften your cream cheese really well so you will get a smooth creamy cheesecake filling.  Make sure you are using room temperature cream cheese for the
    cream cheese mixture.
  • Sugar –  Of course you need sugar to make cheesecake! Granulated sugar is all you need.
  • Large eggs – These help bind the cheesecake and give it richness.
  • Butter –  You need a little butter for the crust. 
  • Brown sugar-  This adds a richer, deeper sweetness to the cake.
  • Sour cream-  Sour cream gives the cheesecake a great creamy flavor.
  • Flour- This helps give the cheesecake stability.
  • Vanilla extract- Adds just a bit flavor.
  • Apples- Peeled and diced.  Use your favorite apples. I like to dice them for this recipe but you can use apple slices if you prefer.  Granny smith or honey crisp are my favorite.
  • Caramel topping- I like to use the ice cream topping. You can also use a homemade caramel sauce or salted caramel sauce.
  • Cinnamon-  Adds a bit of warmth to the apples.
  • Whipped cream for topping, optional.

How to make this Caramel Apple Cheesecake

    1. Preheat your oven to 350 degrees.
    2. Lightly great an 8 inch springform pan.
    3. In a large bowl, mix together graham cracker crumbs, 1/4 cup sugar and melted butter. 
    4. Press the mixture into the springform pan and up sides, I like to use a measuring up to help me press the crumbs up the side.
    5. In a large bowl using an electric mixer beat the cream cheese and sugars until smooth.
    6.  Add the eggs, sour cream, vanilla and flour.
    7. Mix again until just combined.
    8. Place in oven and bake cheesecake for 60 minutes until center of the cheesecake is set and just barely jiggly. 
    9. Set aside to cool.
    10. Place in the refrigerator for 6-8 hours to chill.
    11. Make the topping.
    12. To a skillet over medium heat add your apples, brown sugar and caramel topping.
    13. Cook for 15-20 minutes until the apples soften and the sauce thickens.
    14. Pour the topping over the top of the cheesecake.
    15. Top with whipped cream and more caramel.
    16. Slice and serve!
    17. Wrap leftovers in plastic wrap or aluminum foil and store in an airtight container in the refrigerator for up to 3 days.

Ingredients

  • Crust-
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 4 tablespoons butter, melted
  • Filling-
  • 4 (8 ounce) blocks cream cheese, softened
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 3 eggs
  • 1/4 cup sour cream
  • 2 tablespoons flour
  • 1 tablespoon vanilla extract
  • Topping-
  • 2 large or 4 small apples, peeled and diced
  • 1 tablespoon brown sugar
  • 2 tablespoons caramel topping
  • 2 teaspoons cinnamon
  • Whipped cream for topping, optional
  • More caramel topping for drizzling

Instructions

  1. Preheat your oven to 350 degrees.
