Can I use any pudding mix?

Yes, any light pudding mix will work like vanilla, cheesecake or white chocolate pudding mix. 

Can I freeze this?

You can!  This cake actually freezes well.  Just assemble it as directed and cover tightly with plastic wrap and foil.  Freeze for up to 3 months.  Just thaw completely and serve.

Ingredients used for this easy poke cake

  • Box of carrot cake mix-  Any brand boxed carrot cake mix will do. 
  • Vegetable oil- This helps create a moist cake. 
  • Eggs-  For making the cake rich. 
  •  Milk- This is for the instant pudding mix.
  • Instant cheesecake pudding mix-  You can also use instant vanilla pudding mix if you prefer.  You could also use sweetened condensed milk if you like.
  • Butter-  You want the butter softened to room temperature to make the frosting.
  • Cream cheese- You want the cream cheese softened to room temperature to make the cream cheese frosting.
  • Powdered sugar- This helps sweetens up the frosting.
  • Orange and green food coloring- To make the little carrots on top of the cake.

How to make Carrot Cake Poke Cake

  1. Preheat oven to 350 degrees.
  2. In a mixing bowl combine the cake mix with the oil, eggs and water the package calls for. 
  3. Grease a 9×13 baking dish. 
  4. Pour the cake batter into the dish.
  5. Bake for 35 minutes or until cooked through and toothpick inserted in middle comes out clean. 
  6. Remove the cake from the oven and let cool slightly.
  7. Use a large straw or end of a wooden spoon. 
  8. In a medium mixing bowl whisk the milk with the cheesecake pudding mix until smooth and combined.
  9. Fill the holes in the cake with the pudding mix and spread the rest across the top.
  10. In a large bowl using an electric mixer combine the butter and cream cheese.
  11. Once blended add in the powdered sugar a cup at a time.
  12. Set aside about ¼ cup of the frosting and then about 2 tablespoons of the frosting.
  13. Dye the ¼ cup frosting orange and the 2 tablespoons green.
  14. Frost the cake with the remaining cream cheese frosting. 
  15. Place the orange frosting in a small ziploc bag and the green frosting in a small ziploc bag.  Snip off the corner of each bag.
  16. Pipe on orange carrots all over the cake.
  17. Pipe on some green stems on the carrots.
  18. Refrigerate for 4 hours or overnight. 
  19. Slice and serve!
  20. Store leftovers in an airtight container in the refrigerator for up to 3 days.

  • 3 cups cold milk
  • 2 (3.4 ounce) boxes instant cheesecake pudding mix
  • ½ cup (1 stick) butter, softened
  • 8 ounces cream cheese, softened
  • 4 cups powdered sugar
  • Orange and green food coloring

Instructions
