Can I use any cake mix?

Yes, any light cake mix will work, white cake mix, yellow cake mix, lemon cake mix or french vanilla cake mix.

Can I freeze this?

You can!  This cake actually freezes well.  Just assemble it as directed and cover tightly with plastic wrap and foil.  Freeze for up to 3 months.  Just thaw completely and serve.

Ingredients used for this cherry limeade cake

  • Box of white cake mix-  Any brand will do, you can also use yellow cake mix if you prefer. 
  • Lemon-lime soda- such as Sprite, this gives the cake lots of flavor. 
  • Vegetable oil- This helps create a moist cake. 
  • Eggs-  For making the cake rich. 
  • Lime-  you need lime zest for the cake and also lime wedges for garnish. This adds great lime flavor.  I also use the limes for lime peel twists to garnish the top.
  • Cherry-flavored gelatin- This creates the poke in the poke cake and adds the cherry flavor. 
  • Whipped topping- Like cool whip to top the cake with.  It is a light creamy topping perfect for this refreshing cake. 
  • Jar maraschino cherries– For garnish.

How to make Cherry Limeade Poke Cake

 

  1. FULL RECIPE BELOW
  2.  Pre heat oven to 350 degrees.
  3. Grease a 13 x9-inch pan with baking spray or use a nonstick pan.
  4. In a large bowl with an electric mixer on medium speed, beat
    boxed cake mix, soda, 1/3 cup vegetable oil, egg whites and zest of one lime until combined.
  5. Pour batter into pan and bake for 30-35 minutes until toothpick inserted comes out clean.
  6. Cool cake.
  7. Meanwhile, combine the boiling water with the cherry gelatin and stir gelatin until dissolved.
  8. Remove cake from oven and using a straw or end of a wooden spoon poke holes all over the cake.
  9. Pour cherry mixture into the holes.
  10. Spread the whipped topping all over the top of the cake.
  11. Garnish with cherries and the fresh lime zest.
  12. Refrigerate for 2 hours to let the cake cool.
  13. Slice and serve!
  14. I like to top it with a lime twist too!
  15. Store leftovers in an airtight container for up to 3 days.

  • 1 ¼ cups lemon-lime soda such as Sprite
  • ⅓ cup vegetable oil
  • 3 egg whites
  • Zest of 1 lime
  • 1 (3 ounce box) cherry-flavored gelatin
  • 1 cup boiling water
  • 1 (8 ounce) tub whipped topping
  • Zest of 1 lime
  • Maraschino cherries for garnish
  • Lime slices for garnish

Instructions
