 This cosmic brownie cheesecake is such a delicious, amazing dessert!

This Cosmic Brownie Cheesecake is to die for.  A rich brownie crust is topped with a luscious chocolate cheesecake.  Then the whole thing is topped with a decadent chocolate ganache and those iconic rainbow chips.  This is easy, show stopping and delicious!

There is nothing I love more than a rich and decadent chocolate dessert and this cheesecake is sinful!  It starts with an easy crust made from a brownie mix so you know it’s going to be good!

Everyone loves cosmic brownies, such a classic treat.  Rich fudgy brownie topped with chocolate frosting and those iconic rainbow chips.  I know they are one of my favorite, so I decided to turn my favorite brownie into my favorite dessert and create this cheesecake.  I have made homemade cosmic brownies in the past so I knew I could turn it into a decadent cheesecake with the best parts of a childhood favorite treat.  I do love making homemade brownies but this takes it one step further.

A rich brownie base is topped with a smooth, luscious chocolate cheesecake filling and then gets topped with a fudgy chocolate frosting and of course a good sprinkle of those classic rainbow chips. This homemade version of this classic treat is so easy and impressive.  You could also make these into an easy mini cheesecake recipe by using mini springform pans.

This gets topped with a fabulous chocolate ganache frosting that uses sweetened condensed milk but you can also use the classic ganache recipe that uses heavy cream and chocolate chips. 

This cheesecake comes out perfect everytime and you don’t even have to use a water bath because any cracks in the top get covered with that rich frosting. 

This has all those flavors of those little debbie brownies in one deliciously fabulous cheesecake.  This is always a showstopping dessert and everyone loves it.  It looks great and tastes amazing.  It is the perfect cheesecake to take to any party or make for any event.

The only downfall of this recipe is how fast it will disappear! You might want to make two!

Can I use any brownie mix?

Yes!  I like to use a dark or fudge brownie mix but you can use your favorite brand and flavor for this recipe. You can even use one of your own brownie recipes.

Do I make the brownie mix with the box directions?

Yes! Follow the directions on the brownie mix box to create the crust of this cheesecake.  While they all usually call for water, oil and eggs each one can vary slightly.

How to store this cake?

You can store this in an airtight container for up to 3 days.

Ingredients used

  • Box brownie mix plus the eggs, water and oil listed on the box –  I like to use a rich fudge brownie mix but feel free to use your favorite brownie mix.  This gives you a
    chewy brownie crust.
  • Cream cheese –  Make sure you soften your cream cheese really well so you will get a smooth cheesecake filling.  Make sure you are using room temperature cream cheese.
  • Sugar –  Of course you need sugar to make cheesecake! Granulated sugar is all you need.
  • Semi-sweet chocolate baking bars-  You can find these on the baking aisle.  These are different than chocolate chips so I would not recommend substituting.  You could even use a bittersweet chocolate for a darker taste. You could even add a splash of vanilla extract to the filling if you like. 
  • Large eggs – These help bind the cheesecake and give it richness.
  • Butter –  You need a little butter for the decadent fudgy topping. 
  • Condensed milk –  This is also for that perfect chocolate fudge frosting on top. 
  • Chocolate chips – I like to use semi-sweet chocolate chips here but you can use milk if you like. 
  • Rainbow chips –  I get these right off AMAZON HERE.  You could also just top the cheesecake with cut up little debbie cosmic brownies.  You could also just use rainbow sprinkles in a pinch.

How to make this Cosmic Brownie Cheesecake

  1. FULL RECIPE BELOW
  2. Preheat your oven to 325 degrees. 
  3. Prepare your brownie mix according to the box directions.
  4. Pour the brownie batter into a 9 inch springform baking pan. 
  5. Bake the brownie crust for 15-17 minutes baking time. 
  6. Remove from oven and set aside.
  7. Meanwhile prepare your filling.
  8. In a microwave safe bowl melt the chocolate bars until smooth and melted, set aside to cool slightly.
  9. In a large mixing bowl using an electric mixer combine the cream cheese and sugar until fluffy. 
  10. Next add in your eggs.
  11.  Next mix in your melted chocolate. 
  12. Pour the cheesecake batter onto the brownie layer and place back into the oven to cook for 45 minutes until center is slightly jiggly. 
  13. Remove from oven and set aside to cool slightly. 
  14. Meanwhile prepare your ganache.
  15. In a small saucepan combine the butter, sweetened condensed milk and chocolate chips.
  16. Whisk over medium to low heat until everything is melted and smooth. You could also do this in a microwave-safe bowl in 30 second increments.
  17. Pour the ganache over the cheesecake and sprinkle with the rainbow chips. 
  18. Cool on a wire rack.
  19. Place in the refrigerator to chill for 4 hours. 
  20. Run a knife around the edges of the pan before releasing.
  21. Slice and serve!
  22. You could also line the bottom of the cheesecake pan with parchment paper to make removal even easier.

  • 3 (8 ounce each) packages cream cheese, softened
  • 1 cup sugar
  • 2 (4 ounce each) semi sweet chocolate baking bars
  • 3 eggs
  • 4 tablespoons butter
  • ½ cup sweetened condensed milk
  • 8 ounces chocolate chips
  • Rainbow chips for topping

Instructions

  1. Preheat your oven to 325 degrees. 
  2. Prepare your brownie mix according to the box directions.
  3. Pour the brownie mix into a 9 inch springform pan. 
  4. Bake the brownie crust for 15 minutes. 
  5. Remove from oven and set aside.
  6. Meanwhile prepare your filling.

Notes

  • Keep leftovers refrigerated for up to 4 days.
  • If you want you can just use hot fudge sundae topping in place of the ganache. 
  • I find the rainbow chips on Amazon, but have also found them with the sprinkles in grocery stores.
