Sunny Snacks for Summer!

Hey y’all!!! Do you feel that? It is getting warmer outside! The sun is shining, the air is warming up and summer is right around the corner! Though with the temps in the 80s tomorrow it feels like it is already here!
Of course with such great weather we want to get outside as much as we can. All that playing and running around in the fresh air makes Dean soo hungry! I like to have a snack all ready for him when he comes inside.
We like to prep for summer by heading to Sam’s Club. I love that I can pick up a large variety of snacks at Sam’s Club and with their larger quantity I know I will never run out. We love Sam’s Club and are there most weekends lol so on this particular run I spotted SunnyD in a 24 pack on rollback for $5.38. All of a sudden I got a rush on my own childhood summers, sweaty days playing outside, sitting on the front steps and cooling off with a refreshing glass of SunnyD. Of course I had to grab a pack for Dean to try. I found my SunnyD 24 pack in the refrigerated section on an end cap at my Sam’s.
This week has been a pretty good scorcher, days of 80 degree sunny skies. We’ve played outside, gone to the beach and even planted some flowers and veggies.
On this particular day I really wanted to have a good and fun snack ready for after outside time. First thing in the morning I gathered a few ingredients and Dean and I made some popsicles using that delicious SunnyD we picked up. I make my popsicles super simple, just little paper cups and paper straws, no fancy equipment needed!
This was such a fun project, who doesn’t like making their own popsicles?? I put out a bowl of frozen mixed berries and let Dean put in whatever fruit he wanted into the little cups. Then we filled them up with SunnyD, popped in a straw and into the freezer they went!
The next batch of popsicles we made is my favorite! We made Orange Dreamsicle pops. I prepared some instant vanilla pudding and let Dean spoon some into each cup, poured in some SunnyD and then another dollop of pudding. We put in the straws and they went to the freezer to set up.
Dean had such a great time making these and I love that they are easy and delicious. Of course normally waiting for them to freeze would be torture on kids but that is why I did them in the morning so we could go play outside and they would be waiting for us!
When they were frozen I just peeled off the paper cups and we have homemade delicious, refreshing popsicles we made ourselves!
Dean was particularly hungry this day after a long day of gardening and just general running around lol. I wanted to whip up a little snack to fill his little belly up. I spotted the SunnyD we used earlier and inspiration struck! Sticky Orange Chicken Bites it was!
I just diced up 2 small boneless skinless chicken breasts into bite sized pieces and cooked them until browned and cooked through.
I removed them from the pan and started on my sticky sauce.
The chicken went back in to get coated.
Then I just popped a little toothpick in each one and we had a delicious snack full of flavor!
Sunny Snacks for Summer!
Ingredients
- 2 boneless skinless chicken breasts
- 1/2 cup SunnyD
- 1 Tablespoon Soy Sauce
- 1 Tablespoon Packed Brown Sugar
- 1 Tablespoon Vinegar
- Dash Of Salt
- Dash Pepper
- 1 clove Garlic Minced
- 1 teaspoon cornstarch
- 3 tablespoons SunnyD
Instructions
- Chop the chicken into bite sized chunks.
- Brown the chicken in a pan until cooked through.
- Remove the chicken from pan and set aside.
- Add the SunnyD, soy sauce, vinegar, garlic, brown sugar and salt/pepper to the pan and stir to combine.
- Mix 1 teaspoon cornstarch with 3 tablespoons of SunnyD.
- Whisk the cornstarch slurry into pan sauce a little at a time until the sauce is thickened (you might not need all the slurry)
- Turn the heat off.
- Add the chicken back to the pan and stir to coat.
- Spear each chunk with a toothpick and serve!
This recipe can easily be doubled and served over rice for a quick and flavorful dinner, yum!
These snacks totally hit the spot and made a perfect summer day even more sunny!
Of course we love drinking SunnyD straight from the fridge as a great refreshing thirst quencher!
