Fall brings warm soups, hearty chilis, filling casseroles, slow cooker meals that fill your home with the delicious aroma of dinner and the desserts! Fall desserts are the best, everything is made with warming spices like cinnamon, caramel drizzles over everything and pumpkin and apples go into everything!! No wonder Fall is my favorite!

Today I am making this super easy yet stunning and delicious Spiced Caramel Apple Poke Cake. My grandma makes an amazing spice cake and it is one of my favorites!! I am using a boxed spice cake here because it makes my life easier and it is still delicious!
This cake could not be simpler! The spice cake is poked allowing butterscotch pudding to make an incredible filling. Warm cinnamon fried apples top the cake before getting drizzled with caramel. It tastes like a big bite of Fall! This truly is the perfect fall dessert.
I love how easy this caramel apple cake recipe is to make and it travels so well, perfect for taking to potlucks or a friend’s house. It also just fills your house with the delicious smells of Fall. Who needs fancy Fall candles when you can just make this cake!
The spice cake is perfectly tender, the butterscotch pudding is flavorful and helps keep the cake moist, and the apples, oh man the apples! They are tender and perfectly spiced and take this cake to the next level.
Now I top this cake with caramel sauce from a jar lol, but feel free to make your own. This cake also would be great with a dollop of whipped cream or a scoop of vanilla ice cream, yum!

What is the best caramel to use for topping?
I love using the caramel sauce for topping ice cream, it is easy to find and keeps wonderfully in the fridge. You could also add a little kosher salt for a salted caramel taste. You can also use homemade caramel sauce.
Topping ideas?
Any nuts like pecans, walnuts or even honey roasted peanuts would be great! You can also use caramel or butterscotch chips, granola or oatmeal, yum!
Can I use any flavor cake mix?
You can easily use any flavor box cake mix you like, white cake mix, yellow cake mix would be wonderful!
Can I use apple pie filling?
If you are in a real time crunch you can use canned apple filling for the topping.
Ingredients for this delicious apple spice poke cake
One box spice cake mix- 15.25 size box of cake mix
Eggs, oil and water- Box mixes can vary so use what your box ingredients calls for.
Butterscotch pudding- This gives this cake its caramel flavor.
Milk- For the pudding, use your family’s favorite milk.
Chopped peeled apples- Red or granny smith apples work great for the homemade apple pie filling.
Butter- Adds richness to the apples.
Brown sugar- Makes the apples sweet and delicious.
Cinnamon- Gives the apples that Fall flavor. You can also use apple pie spice.
Caramel sauce- For topping. I like to use the jarred kind.
How to make Spiced Caramel Apple Poke Cake
- Mix spice cake according to box directions.
- Pour into 9×13 pan and bake cake according to directions
- Poke holes all over cake either with a straw or end of a wooden spoon. Let cake cool.
- Mix up pudding mix with 3 cups milk
- Pour pudding over cake
- In a skillet mix the apples, sugar, butter and cinnamon
- Cook until apples are tender
- Pour apples over top of the cake
- Drizzle with caramel
- Chill and serve!
- Keep refrigerated.

- 3.4 ounce box butterscotch pudding
- 3 cups milk
- 3 cups chopped peeled apples
- 2 tablespoons butter
- 1 tablespoon brown sugar
- 1 1/2 teaspoons cinnamon
- Caramel sauce
Instructions
- Mix spice cake according to box directions.
- Pour into 9x13 pan and bake according to directions
- Poke holes all over cake
- Mix up pudding mix with 3 cups milk
- Pour pudding over cake

also do you let the pudding set before spreading over the cake

Nope!! I just do everything warm, I do let the pudding thicken just slightly but not all the way before pouring it.
