Hey y’all!!  I am so excited to share this recipe with you guys today!! Why?  Because it is a super out of the box recipe that is delicious!  It is also a brunch recipe and I love brunch because it means I don’t have to get up at the crack of dawn to enjoy some delicious food.  And most important it features Smithfield Sausage and being born and raised in Virginia we grow up eating Smithfield and so to be able to share some of their delicious products with you today does my heart good.

So back onto the good stuff, brunch.  Brunch food can be pretty much any food as long as you top it with an egg right? Lol

So when I saw these new Fresh Breakfast Sausage Links from Smithfield I knew I wanted to make a killer brunch item with them.

All of Smithfield’s new breakfast pork items are amazing!  You can choose from links, rolls or patties and are delicious on their own and made into a great dish.  I really love that each variety is made with premium quality pork, and are gluten free and contain no MSG.

It comes in mouthwatering flavors like Hometown Original, Bacon and Maple flavors, it’s impossible to choose just one so I suggest serving them all at your next brunch!

For this recipe I am using the Maple Sausage Links, because maple sausage links are like my favorite breakfast food ever and when I saw Smithfield now made them I was ecstatic!

Now this recipe may be a bit off the beaten brunch path but trust me it is fabulous and is actually really good anytime of the day.  It of course it perfect for brunch but it also makes a great lunch item and a really good hits the right spot dinner.

It also couldn’t be easier.

First you just want to brown up your Maple Sausage Links and set them aside.

In a small mason jar whip up your maple vinaigrette.

Toast some waffle pieces tossed in butter in the oven till golden brown.

Meanwhile fry an egg in the pan you cooked the sausage in (you want to get all the good flavors up)

And now assemble!

I toss the lettuce with dressing, then top with the croutons, sausage and of course the perfectly runny fried egg.

Sweet Sausage Salad with Waffle Croutons

Ingredients

  • 1 package Smithfield Maple Sausage links
  • 4 Frozen Waffles
  • Spring mix lettuce
  • ⅓ cup oil
  • 2 tablespoons Dijon mustard
  • 3 tablespoons maple syrup
  • 1 tablespoons vinegar
  • Salt and pepper to taste
  • ¼ cup melted butter
  • 4 eggs

Instructions

  1. Brown the sausage links until cooked through.
  2. Cut into bite sized pieces.
  3. Preheat oven to 350
  4. Cut waffles into bit sized squares
  5. Mix waffles with butter and place on cookie sheet and bake about 7-10 minutes until crunchy and lightly browned.
  6. Mix oil, mustard, syrup, vinegar, salt in pepper into a mason jar.
  7. Shake vigorously until dressing is thoroughly mixed. (make sure that lid is tight!)
  8. Fry 4 eggs over easy.
  9. Toss the lettuce with the dressing.
  10. Top the lettuce with the sausage, waffle croutons and a fried egg.
  11. Drizzle more dressing over the salad and serve!!

This my friends alongside a chilled mimosa is brunch perfection!
