So these pork chops are gorgeous they would be delicious with just a quick rub and a some time on the grill but I had something else in mind, since it was Tuesday and we like to do a little Mexican flair to dinner on those days.
That is how these Fajita Topped Pork Chops came to be, and let me tell you we have them once a week now lol! They are so easy to prepare and can be made on the grill or if it’s raining (like it always is here!) you can cook them on the stove! I love that I can cook this indoors or out. Thanks to these boneless pork chops dinner is super quick but it is also perfect for entertaining! They are gorgeous!
You just spice up the chops with your favorite fajita seasoning and either grill the chops or cook them in a pan while you caramelize some onions and peppers.
Then you just top the cooked chops with the peppers and onions and melt a little cheese over the top.
Next top them however you like! We like a little sour cream and scallions but you can add salsa or guacamole too! Yum!
You can serve this with some cheesy rice or a fresh salad for a stunning meal that takes minutes!
Can I substitute bone in pork chops?
Of course!! Smithfield All Natural Bone In Pork Chops would also work fabulous for this recipe, just adjust cooking times accordingly!
What cheese is the best for this recipe?
I prefer a shredded colby or pepperjack which adds a little spice but you can use your favorite shredded cheese!
I actually like to double this recipe because the leftovers are amazing in a tortilla, a quesadilla or mixed with black beans, corn and cheesy rice for a fabulous casserole!
- 4 Smithfield All Natural Boneless Pork Chops
- assorted chopped bell peppers
- sliced onion
- fajita seasoning
- 1 cup shredded cheese (any kind you like)
- 2 tbsp butter
- Melt 1 tbsp butter in a skillet over medium heat.
- Rub the chops down with the fajita spices and place them in a skillet cooking for 3-5 minutes per side
- Meanwhile sauté the onions and peppers in another skillet with 1 tbsp butter.
- Top the chops evenly with the peppers and onions and then the cheese.
- Cover pan for 2 minutes to let cheese melt.
- Top anyway you like and serve!
