There is nothing I love more an easy dinner that I can just throw in the slow cooker that everyone will love and this Slow Cooker Cheesy Chicken Rice fits the bill.

I love that I can just throw everything in the slow cooker and have a delicious, hearty, flavorful dinner that everyone enjoys.  Whenever I find a dinner that everyone in my house likes that makes me happy!  And for it to be in the slow cooker? That’s a double win!

This dish is full of tender chicken, rice and corn in a cheesy sauce that everyone loves. Of course the leftovers are great the next day.

This dish is a comfort meal and a weekly staple in my house because it is so easy to make! I love this easy chicken and rice recipe. This crock-pot cheesy chicken is a classic family favorite.

Can I use a different cut of chicken?

You can use boneless skinless thighs or chicken tenderloins for this recipe and they will work great. 

What should I serve this with?

This is a meal in itself!  It already has your protein and rice so I just serve this with a salad or a nice warm roll like these Homemade Hawaiian Rolls.  

Can I add other vegetables with this?

You can add any vegetables you like to this dish.  Carrots would be great in this, broccoli florets would work, peas would be delicious in this or even some red or green pepper.  Use what your family likes.

Ingredients used

  • Chicken-  You can use any cut of boneless skinless chicken you have on hand. I like to use boneless, skinless chicken breasts, tenderloins or boneless skinless chicken thighs.  The boneless chicken thighs would give it a great flavor.
  • Garlic powder-  You can use fresh garlic if you prefer but garlic powder works great in this recipe.
  • Onion powder-  This just adds a little extra flavor in addition to the fresh onion. 
  • Cream of chicken soup-  You can substitute this for cream of celery soup or cream of mushroom soup if you prefer. 
  • Onion-  Fresh or frozen diced onion works here. 
  • Frozen corn-  I like to use frozen corn but you can use canned if that is what you have on hand. 
  • Yellow rice mix – I use Zatarains brand.
  • Cheddar cheese-  You can really use any flavor cheese you prefer.

How to make Slow Cooker Cheesy Chicken and Rice

  1. Spray the inside of your slow cooker with some non-stick spray.
  2. In your slow cooker place your chicken.
  3. Sprinkle your seasonings over the top of the chicken.
  4. Add in the cream of chicken soup, the onion and sweet corn.
  5. Give everything a quick mix.
  6. Cover and cook on low for 6 hours or high for 4 hours.
  7. 30 minutes before you are ready to serve stir in the rice mix and shredded cheddar cheese
  8. Cover and cook for 30 minutes.
  9. Serve!
  10. Store leftovers in an airtight container for up to 3 days.

Ingredients

  • 1-2 pounds of chicken, cubed
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 10.5 ounce can cream of chicken soup
  • Half of an onion, diced
  • 10 ounces frozen corn
  • 6 ounce box yellow rice mix (I use Zatarains)
  • 1 cup cheddar cheese, shredded

Instructions

  1. Spray the inside of your slow cooker with some non-stick spray.
  2. In your slow cooker place your chicken.
  3. Sprinkle your seasonings over the top of the chicken.
  4. Add in the cream of chicken soup, the onion and corn.
  5. Give everything a quick mix.
  6. Cover and cook on low for 6 hours or high for 4 hours.
  7. 30 minutes before you are ready to serve stir in the rice mix and shredded cheese. 
  8. Cover and cook for 30 minutes.
  9. Serve!

Notes

  • Store leftovers in the fridge for up to 4 days. 
  • You can use any cheese you like.  Pepperjack would add a pop of spice.
  • You can skip the corn or substitute it for peas or broccoli.
  • You can top with more cheese and parsley before serving.
  • You can use whole boneless skinless chicken breasts or thighs if you like, just shred them up a bit before serving.
