Hey ya’ll!!  It is finally fall, my favorite season! This is the time of year for boots and scarves, brisk air and the crunchy fallen leaves.  It is time for pumpkins and apple cider, and quilts as the nights get chillier.  I love it!!!

Fall also means times for back to school which means things around here get crazy!  Between baths and homework there is hardly time to get a decent meal on the table.  It is this time of year that I rely on easy and quick meals the most.  I need good food fast.

I love to keep my fridge stocked with plenty of Gwaltney to help me get through this busy season while we all wait to fall back into routine.

Gwaltney has something to help me get a quick and delicious meal on the table any time of the day from bacon and sausage to lunchmeat and corndogs.  Having them on hand gives me peace of mind that I can always whip up something in a jiffy!

One of my favorite staples to make it through the week are these delicious Mini Club Croissants!  They are perfect for lunch, dinner or even an after school snack.  I just load mini croissants up with Gwaltney Hardwood Smoked Bacon, Honey Ham and Roasted White Turkey then add a delicious sweet mustardy sauce and some melty cheese.

Ingredients

  • 8 mini croissants
  • 8 slices cheddar, swiss or white american cheese
  • 8 slices Gwaltney Honey Ham
  • 8 slices Gwaltney Smoked Turkey
  • 8 slices Gwaltney Bacon, cooked crisp
  • 2 tablespoons dijon mustard
  • 1 tablespoon brown sugar

Instructions

  1. Slice your croissants in half
  2. Mix the mustard and brown sugar together
  3. Spread on each half of croissants
  4. Place one slice cheese (folded to fit), one slice ham, one slice turkey and one slice bacon on each croissant.
  5. Top with other half of croissant.
  6. Wrap each club in foil
  7. You can pop these in the fridge and grab one out whenever you need or you can cook right away.
  8. They warm up in a 350 degree oven for 10-15 minutes.

I keep these wrapped in foil in the fridge and anytime anyone is hungry they can just grab one and heat it up in the oven for a few minutes and then they have a delicious meal or snack.

By prepping this in the beginning of the week I am set for those ultra busy days when cooking is the last thing I have time for.  I love that Gwaltney lunchmeats are made with lean, premium meat and are over 97% percent fat free!!

These little sandwiches are so delicious!  The bacon really adds the perfect amount of smokiness to give these sandwiches all the flavor they need!
