Yes, you can substitute homemade whipped cream for whipped topping. Just keep in mind that homemade whipped cream is a little less stable than store-bought whipped topping, especially during hot summer weather. If you’re serving these at a cookout or outdoor party, whipped topping tends to hold up better.

How do I know when the cheesecake bars are fully set?

The bars should feel firm when gently touched in the center and should slice cleanly. I recommend chilling them for at least 4 hours, but overnight is even better. The longer they chill, the easier they are to cut into neat bars.

Can I use a different crust?

Definitely! Graham cracker crust is classic, but vanilla wafer crumbs, Golden Oreos, shortbread cookies, or even pretzels can make delicious alternatives. Each option gives the bars a slightly different flavor while still pairing perfectly with the creamy cheesecake filling.

Can I use fresh or frozen berries?

Fresh berries are best if you’re using them as decoration because they hold their shape and color better. If you’re mixing berries into the filling, frozen berries can work, but make sure they are thawed and well-drained first so they don’t add excess moisture.

Ingredients used for these 4th of July Cheesecake Bars

  • Chocolate oreo crumbs- I like to use the chocolate cookie crumbs but you can use vanilla oreos, vanilla wafers or graham cracker crumbs for a graham cracker crust.
  • Sugar-  You need a little granulated sugar for the crust and the filling. 
  • Unsalted butter- You need this melted for the crust, I like to use unsalted but you can use what you have on hand. 
  • Cream cheese- Of course for creamy cheesecake bars you need cream cheese and you want to make sure this softened to room temperature so it gives you a silky smooth cheesecake batter. These bars call for 4 blocks of cream cheese.  I have not made this with
    low-fat cream cheese but you could certainly use that if you prefer.
  • Sour cream-  This adds a little richness and tang to the cheesecake. 
  • Vanilla extract-  I like to use vanilla extract in these bars but you can use any extract you like, lemon would be perfect for the summer you could even use a little fresh lemon juice or lemon zest. 
  • Eggs-  Eggs give these cheesecake bars their richness and help hold everything together. I use large eggs for this recipe. 
  • Red food coloring and blue food coloring-  I prefer to use gel food coloring for this recipe as the colors are more vibrant and perfect for the Fourth of July. 
  • Whipped topping- You can use the can whipped topping or cool-whip if you like. It makes a
    delicious topping.
  • Sprinkles-  I can find red, white and blue sprinkles in any grocery store this time of year but you can also find them HERE ON AMAZON

How to make these Summer Cheesecake Bars

  1. Preheat the oven to 350 degrees.
  2. Grease a 9×13 baking dish.
  3. To a mixing bowl combine the cookie crumbs, ¼ cup sugar and melted butter.
  4. Press crumb mixture into the prepared pan and press mixture down into an even layer. I just spray my baking dish but you could line it with parchment paper for easy slicing.
  5. Bake for 10 minutes. Remove from the oven and set aside to cool slightly while you prepare the filling.
  6. Reduce the oven temperature to 325 degrees.
  7. In a large bowl using an electric mixer or hand mixer beat the cream cheese on medium speed until smooth. 
  8. Add the sour cream and mix until combined.
  9. Mix in the sugar and vanilla extract.
  10. Slowly add the eggs to the cream cheese mixture until everything is thoroughly mixed together.
  11. Separate and pour batter into 3 bowls and dye one bowl red and the other bowl blue. 
  12. Spoon the batter onto the crust in alternating colors. 
  13. Using a knife lightly swirl the colors around. 
  14. Bake in preheated oven for 35 to 40 minutes or until the filling is set and center jiggles slightly.
  15. Remove from the oven and cool completely
  16.  Place in the fridge to chill for at least 4 hours.
  17. Slice, top with whipped cream and sprinkles and serve!

Variations

Add raspberries between the strawberry rows.
