The holidays are approaching, the weather is chilly and everyone is just busy busy busy! Busy days call for morning coffee to give us a boost of energy and warm up those brisk mornings. Once the cold weather rolls in so does my favorite coffee creamer, International Delight® Peppermint Mocha Coffee Creamer. That first cup every year just floods me with memories of winters before, Christmas mornings, flannel pajamas, chilly nights on the sofa and I cannot help but to have a big smile with every sip.
As soon as Halloween is over I head to Walmart to oogle all the new Christmas decor and stock up on all the holiday treats they put out, especially the International Delight® . You can find all this delicious creamer in the refrigerated bins in the aisle, where they keep all the special holiday goodies!
It is so easy this time of year to just rush around and have no time to sit down and reconnect with family, friends and even just yourself. That was me this last month so this weekend I took the time to whip up some delicious holiday treats and a couple cups of coffee for my husband and I to just sit and relax and connect with each other over hot mugs of coffee and my delicious Peppermint Mocha Cheesecake Cookie Cups.
We talked about the upcoming holidays, present ideas, our week, movies we’ve had no time to watch and just had a great little coffee date at our dining room table in our pajamas. It was wonderful, we reconnected after a packed week of barely seeing each other and wrangling our two boys.
The coffee was just what we needed to help us stay up and catch up on TV and the cookie cups provided a delicious after dinner treat. I took the easy way with the cups and used premade cookie dough, which makes my life so much easier.
Speaking of cookie dough, is there anything that screams holidays more than sugar cookies? I think we all have memories of making sugar cookies and cutting out Christmas tree shapes and stocking shapes, impatiently waiting for them to cool before smearing them with red and green frosting and way too many sprinkles. Well International Delight® wants to take you back there with their Sugar Cookie Coffee Creamer. One sip of that and you are a little kid on Christmas morning all over again!
Since peppermint mocha is my absolute favorite holiday flavor I knew it would make the best cheesecake cookie cups!
They are amazing!!! Of course everyone always loves the cheesecake cookie cups and this peppermint version went over just as well!
Once baked I use a little shot glass to press an indention in the middle while they are still warm. We are going to fill those little hollows with a delicious chocolate pudding cream cheese mixture, yum!
Peppermint Mocha Cheesecake Cookie Cups
Ingredients
- Break and bake sugar cookie dough, or a roll of sugar cookie dough rolled into 24 balls
- 8 oz block softened cream cheese
- Large box instant chocolate pudding, 5.1 oz or so
- 1 cup Peppermint Mocha Creamer
- Mini Candy Canes
Instructions
- Press each of the 24 pieces of dough in bottom and up side of greased mini muffin cup.
- Bake at 350°F for 12 to 15 minutes.
- Immediately press a shot glass into each cup to form a middle.
- Cool 20 minutes.
- Remove from pan; cool completely.
- While cookie cups are cooling mix the filling.
- Beat an 8 oz block of softened cream cheese in a mixer.
- In separate bowl mix a large box of instant chocolate pudding with 1 cup creamer and mix till smooth and thickened.
- Add pudding to cream cheese and blend.
- Put cream cheese mixture into a ziploc bag and snip the end off and pipe filling into cups.
- Garnish and serve!
These little cups look amazing on a platter for the holidays and are soo easy to make but look oh so festive with their little peppermint handles.
