These bars freeze beautifully. Just wrap them in plastic wrap and freeze for up to 3 months.  

Can I use other cookies for the crust?

Yes!  You can use crushed-up vanilla wafers or even vanilla oreos, just keep the same amount.

Ingredients for this No Bake Dessert

  • Graham cracker crumbs- You can also use vanilla wafer crumbs or even vanilla oreo crumbs.
  • Butter- You can use salted or unsalted butter, whichever you prefer.
  • Cream cheese- You want to make sure your cream cheese is softened
  • Whipped topping- Like cool whip. This makes the dessert nice and fluffy, make sure it is thawed.
  • Rainbow sherbet- You want the one with the three flavors orange, lime,
    raspberry sherbet.

How to make this No Bake Sherbet Cheesecake Bars

 

  1. FULL RECIPE BELOW
  2. Line a 9×13 baking dish with parchment paper.
  3. Melt your butter.
  4. In a mixing bowl combine your graham cracker crumbs and melted butter. You can crush the
    graham crackers up with a food processor.
  5. Press the crumbs into the bottom of your lined dish. 
  6. In a large mixing bowl using an electric mixer whip the cream cream.
  7. Blend the whipped topping into the cream cheese. 
  8. Separate the cheesecake batter into 3 bowls.
  9. In one bowl place the raspberry portion of the sherbet, in the other the lime portion of the sherbet and in the final bowl the orange sherbet.  It is okay if you get some of the other flavor sherbet into your bowl.
  10. Using the electric mixer stir up each bowl. 
  11. Next pour your lime mixture onto the cookie crust.
  12. Next the orange.
  13. Finally the raspberry mixture.
  14. Using a butter knife carefully swirl the flavors together. 
  15. Place into the freezer for 8 hours or overnight.
  16. Slice and serve!
  17. Store leftovers in an airtight container in the freezer for up to 2 months.

  • 6 tablespoons butter
  • 2 (8 ounce) blocks cream cheese, softened

  • 48 ounces rainbow sherbet (orange, lime, raspberry)
