I have been making a version of this for years !!!!!!!!! I use a cook-type lemon pudding, and pour it over a white cake hot !
I don’t poke holes either….. Yes, Cool Whip on top !
I think a lemon jello poke cake would be awesome! I also never tried instant lemon pudding ! LOL So this seems a nice combo !
They do make a lemon cake mix available, so that would also boost the flavor !!!!!
Soooooo…. I would like to try a poke cake with COFFEE flavored gelatine !!! Maybe in a German Choc Cake ???
What do you think ??? I think I might add espresso powder to the cake too …..
Made this today…sadly was disappointed it wasn’t as lemon tasting as I expected . I love poke cakes, so I think I will take the suggestion of using lemon cake mix as well. Thanks for sharing though. Have a great weekend!

Can it be made in round cake pans as a layered cake?
Not sure if some of the pudding sits above the cake after fridgeration, it would slurry off the first

Do you use instant or cook and serve lemon pudding? It looks so delicious and I love poke cakes, anything easy in summer.

Sadly I do not think this would work as a layer cake, the pudding would make things too slippery. Hope you daughter has a happy birthday!
