Hey mamas! I love this time of year! The weather is cooling off (slightly) and it is back to school time! This is Dean’s first year in school and I am a wreck! Though I am super nervous about him going to school I still love back to school shopping at Target, the crayons, the notebooks, the book bags and packing lunches! I am soo excited to pack his lunch every day! He only likes peanut butter and jelly so I have to get a little creative to keep it fresh and appealing every day. Now of course I peruse Pinterest and I see all these adorable ways to fix your kid’s lunchbox and while I will be trying some of them throughout the school year I also wanted to share with you a cute easy way to serve peanut butter and jelly which requires no special cutters or ingredients (it may look cute but my kid would never eat some of the sandwich embellishments I see lol) Plus there are some days where I am just tired or too busy to create a character or animal out of a sandwich so I rely on these peanut butter and jelly “sushi” rolls. They are simple to make and Dean loves them!! You just flatten out the bread, spread one with peanut butter and one with jelly, roll them up and slice! So easy! I serve them with fruit and toss in a pack of crackers and he is ready to go with his super cute lunch that took me no time! There is another trick I would like to share with you to make lunch packing even more easier!
