Can I skip the crumb topping?

Of course! You can always leave the muffin tops plain, dust them with a little powdered sugar or maybe a quick icing. 

Can I use pumpkin pie filling mix?

Nope!  There is a very big difference between pumpkin pie filling mix and pure pumpkin.  Costco uses a specific kind of pumpkin in their pies and I heard a rumor it is the same pumpkin they use in the Libbys brand pure pumpkin so that is what I use.  

Can I freeze these?

Of course!  Make sure you wrap this tightly or in a freezer-safe container and I would freeze it up to 2 months ahead of time then just thaw it and serve!

Ingredients used for Costco’s pumpkin muffin recipe

  • Libbys Pure Pumpkin-  You need to pure pumpkin and not pumpkin pie filling.
  • Pumpkin pie spice-  This where pumpkin pie gets all its flavor. 
  • Cinnamon- Cinnamon also helps give these muffins such a sweet aromatic Fall flavor.
  • Eggs-  You need eggs to bind everything together
  • Brown sugar-  Brown sugar deepens the flavor of these muffins and helps them stay moist.
  • Granulated sugar-  And just a bit of white sugar to also help sweeten it.
  • Flour- Regular flour is all you need for these easy muffins.
  • Baking soda- These help give the muffins their rise.
  • Vegetable oil- This also helps these muffins stay nice and moist.
  • Sour cream-  This also gives these muffins an amazingly light texture.
  • Powdered sugar- For dusting the tops.

How to make Costco Pumpkin Muffins

FULL RECIPE BELOW

  1. Preheat your oven to 350 degrees.
  2. Line a 6 count jumbo muffin tin with jumbo muffin liners.
  3. In a large bowl, whisk together the flour, baking soda, pumpkin spice and cinnamon until combined.
  4. To that bowl add the oil, sour cream, brown sugar, granulated sugar, eggs and pumpkin.  Mix together until just combined. 
  5. Divide the batter among the 6 muffins cups.
  6. In another bowl using your fingers combine the ½ cup flour, ¼ cup granulated sugar, 3 tablespoons brown sugar and 1 teaspoon cinnamon until coarse crumbs form.
  7. Sprinkle the crumb topping all over each muffin.
  8. Place in the oven and bake for 25-30 minutes when a toothpick inserted in the middle comes out clean. 
  9. Remove from the oven and cool. 
  10.  Dust the tops with powdered sugar and serve!
  11. Cover leftovers with plastic wrap or in an airtight container and store for up to 3 days.

  • Ingredients
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons cinnamon
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/3 cup vegetable oil
  • 1/2 cup sour cream
  • 1/4 cup brown sugar
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 (15 ounce) can pure pumpkin
  • Topping
  • 1/2 cup flour
  • 1/4 cup sugar
  • 3 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 6 tablespoons butter, softened
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350 degrees.

  • You can make these using a 12 count regular muffin tray just start checking the muffins around 15 minutes.
