Can I top these with sprinkles?

Of course! You can skip the chocolate drizzle and use holiday sprinkles instead.

Can I use any nuts?

While pecans are traditionally used any nut will technically work.

Which chocolate works best?

Any chocolate you like will be delicious in this recipe.  I do prefer to use a melting chocolate or almond bark, or candy melts.  Sometimes chocolate chips can give you a little trouble melting but usually adding a little oil will fix that. 

Ingredients 

  • Granulated sugar-  You need this to make the base of the pralines.
  • Brown sugar-  This is also used to make the base of the pralines but also adds a rich
    caramel-like flavor.  I just use light brown sugar.
  • Evaporated milk- Gives the pralines that irresistible melt in your mouth consistency. 
  • Butter- Butter helps give the pralines their caramel flavor.
  • Vanilla extract- Every sweet treat needs a little vanilla.
  • Toasted pecan halves- Toasting makes all the difference in terms of flavor.
  • Red candy melts- These are just for decoration.
  • Green candy melts- Also just for decoration and can be subbed out for sprinkles.

How to make these Christmas Pecan Pralines

  1. In a heavy bottomed pot over medium heat stir together the granulated sugar, brown sugar, evaporated milk and butter.
  2. Bring the mixture up to a boil and let boil until it reaches 240 degrees on a candy thermometer.  You want it to be the soft ball stage. 
  3. Remove the pan from the heat and let cool for 5 minutes.
  4. Next add in the vanilla and pecans. 
  5. Using a wooden spoon you want to beat the candy mixture until it is no longer shiny and it really starts to thicken up.  
  6. Using a tablespoon drop the mixture onto a parchment lined tray.  
  7. Set aside until the candy has completely cooled and set up.
  8. In a microwave safe bowl melt the red candy melts in 30 second intervals until smooth and melted.
  9. Repeat with the green candy melts.
  10. Place the melted red chocolate in a piping bag or ziploc bag with the corner snipped off.
  11. Repeat with the green candy melts.
  12. Drizzle the red and green over the praline.
  13. Let the red and green candy set.
  14. Serve!
  15. Store leftovers in an airtight container for up to 2 weeks.

  • 1 1/2 cups brown sugar
  • 1 cup evaporated milk
  • 6 Tablespoons butter
  • 1 teaspoon vanilla extract
  • 2 cups toasted pecan halves
  • ½ cup red candy melts
  • ½ cup green candy melts

Instructions

  1. In a heavy bottomed pot over medium heat stir together the granulated sugar, brown sugar, evaporated milk and butter.

Notes

  • Store leftovers in an airtight container for up to 2 weeks and the freezer for up to  months.
  • You can use salted butter or salted pecans for a little sweet and salty flavor.
  • A candy thermometer is best for measuring the temperature but you can drop a bit of the mixture into ice water and see if it forms a soft sticky ball.  If it does then you are ready to go.
