 Christmas Jello Roll Ups are always a hit at the holidays and so easy to make!

These Christmas Jello Roll Ups are such a fun and festive treat the kids love (and adults!) I like to make these red and green colors that go perfect with the holidays.  All you need is jello, water and marshmallows.  Your kids will love seeing how the mixture separates when it cools so there is a lighter marshmallow layer and a jello layer.  The flavor of these are so wonderful and they are so fun to eat.  These are a great treat during the holidays and look so cute!

I love making sweet treats for the holidays, especially Christmas.  I really like making easy, festive treats because time is limited during the holidays so I am always on the look out for easy, quick treats.  I love to make sweet treats for my Christmas dessert platter, and these Jello Roll Ups are always a hit.  

These little sweet bites are full of flavor.  It is a simple treat made up of jello and marshmallows. It does not get easier than that! 

Kids love helping make these because they are like magic.  You mix up the ingredients and then after chilling you magically get a jello layer and a marshmallow layer.  My kids always love seeing that happen.

You can make these all year round if you prefer, you can change the color of these rollups and of course the flavor.  For Christmas I like to do red and green but come Spring I will be making these in pink, yellow and blues.

This is an impressive candy that comes together in no time, you just mix these ingredients and voila perfect holiday treat.  No one can resist popping these flavorful treats in their mouth every time they pass by. 

These are also perfect for the holidays because you can easily make them ahead of time.  Anything I can make ahead for the holidays is a win in my book!

Can I use other flavors of jello?

Of course!  Now for Christmas I do stick with red and green but there are different flavors of red like strawberry, cherry, raspberry, cranberry and for the green there is lime, green apple and even watermelon.

Do I have to roll these up?

While I do love the look of the little spirals you can just cut these into squares.  They won’t be quite as cute as the spiral but they will still taste delicious!

How long do these stay fresh?

This candy stays fresh in an airtight container in the fridge for up to 5 days.

Ingredients

  • Strawberry jello mix – You can also use cherry, cranberry or raspberry jello.
  • Lime jello mix – You can also use watermelon or green apple.
  • Mini marshmallows – Marshmallows are what create the layers.

How to make these Christmas Jello Roll Ups

  1. FULL RECIPE BELOW
  2. In a microwave safe bowl or measuring cup stir together the strawberry jello mix and ½ cup of water.
  3. Once combine place in the microwave for 1 minutes 30 seconds.
  4. Next stir in 1 ½ cups of mini marshmallows and microwave for another 1 minute.
  5. Stir until all the marshmallows are melted.
  6. Grease an 8×8 baking dish well.
  7. Pour the jello mixture into the pan.
  8. Place into the fridge to cool for at least 2 hours.
  9. Repeat this process with the lime jello. 
  10. Once both pans have cooled run a knife along the edge of the pans.
  11. Slice the jello in the pan down the middle.
  12. Using a spatula get one half of the jello out of the pan and place on a piece of parchment paper marshmallow side up. 
  13. Starting with the short side roll the jello up.
  14. Repeat with the rest of the jello in both pans.
  15. Once you have all your rolls take a knife and slice them into slices.  I like to do about ½ inch to inch slices.
  16. Serve!

Notes

  • Store leftovers in the refrigerator covered for up to 3 days.
  • You can use any flavor jello you like. 
  • If you dont have mini marshmallows you can use 12 regular size marshmallows.
