These Baked Taquitos are so easy and delicious!

These Baked Chicken Taquitos are one of my family’s favorite dinners!  These are baked, easy to make and make the perfect freezer meal!  The filling is a flavorful mix of shredded chicken, pepperjack cheese, green chiles, green salsa, and scallions.  All rolled up into tortillas, they get baked until crispy and brown.  Perfect for dipping in salsa or sour cream, these are always a hit!

I love an easy dinner that everyone enjoys, doesn’t take a lot of time or a lot of ingredients!  That is another one of my favorite things about this recipe, most of the ingredients I already have on hand!  My whole family loves this meal and so do I!

I love that in just a few minutes I can have a delicious, flavorful dinner that everyone loves.  These baked taquitos are so easy to whip up and I love that they bake up and get crispy right in the oven. 

Shredded chicken, pepperjack cheese, green chiles and scallions add a ton of flavor.  They get baked in the oven until nice and crispy.  They are perfect for dipping in sour cream or salsa. 

I love that you can customize this to your family’s taste, switch out the cheese, add veggies, you can totally make this your own.

Can we also take a minute to talk about how budget-friendly this dinner is?  Everyone is feeling the pinch with the grocery bill right now and you can’t get much cheaper than chicken and tortillas, so super budget-friendly.  This is a fabulous dinner when you are trying to save a few pennies.

These is also such a great freezer meal.  Just whip these up, freeze them and bake them off whenever you need them.

Can I use any protein?

Yes, I use chicken but you can swap it out for ground beef, ground turkey or shredded pork. 

Can I make these on a different size tortilla?

Of course! But obviously, it will change the yield so adjust accordingly.

Can I switch out the cheese?

Yes! Pepperjack adds a ton of flavor but you can use whatever cheese you have on hand. 

What else can I add to these taquitos?

Caramelized onions and peppers, jalapenos, bacon, salsa, guacamole.  You can add anything you like in these.

Ingredients used

  • Shredded cooked chicken-  This is a perfect recipe to use up leftover chicken or rotisserie chicken. 
  • Green salsa-  A little bit of green salsa adds great flavor to these.
  • Cream cheese-  This helps everything bind together and makes them nice and creamy. 
  • Chopped green chiles-  These add such a great flavor without adding heat. 
  • Scallions-  Green onions add such a great flavor in these taquitos. 
  • Garlic powder-  To add flavor to the chicken. 
  • Onion powder- To add flavor to the chicken. 
  • Smoked paprika-   Adds great smoky flavor to the chicken. 
  • Pepperjack cheese- This adds a little bit of heat and great cheesiness. 
  • Small flour tortillas-  I like to use the small tortillas for these taquitos. 
  • Spray oil-  This is important as it is what makes the tortillas crisp up in the oven.

How to make these Baked Chicken Taquitos

 

  1. FULL RECIPE BELOW
  2. Preheat your oven to 350 degrees. 
  3. In a large bowl combine your chicken, salsa, cream cheese, green chiles, scallions, garlic powder, onion powder, paprika and cheese.
  4. Mix until well combined.
  5. Divide the filling evenly among the 12 tortillas and roll up.
  6. Place the taquitos on a parchment lined tray sprayed with spray cooking oil.
  7. Spray the tops of the taquitos with the cooking oil spray. 
  8. Bake for 15-20 minutes until crispy and the edges are browned. 
  9. Serve with all your favorite taco toppings and dips like salsa and sour cream.

Ingredients

  • 2 cups shredded cooked chicken
  • ¼ cup green salsa
  • 3 ounces cream cheese, softened
  • 4 ounce can chopped green chiles
  • 3 scallions, chopped
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • 2 cups shredded pepperjack cheese
  • 12 small flour tortilla
  • Spray oil

Instructions

  1. Preheat your oven to 350 degrees.

Notes

  • Store these in an airtight container for up to 3 days. 
  • These freeze beautifully before cookings. Just freeze in a single layer then transfer to freezer safe bags once fully frozen.  They will keep for up to 3 months. 
  • This is a great way to use up leftover chicken or a rotisserie chicken, it makes this recipe super fast. 
  • You can substitute any flavor cheese you like.
